Breakfast is one of my favorite meals of the day. As soon as I wake up in the morning I'm already thinking about what I'm going to eat for breakfast. Since it's the most important meal of the day I've learned that when I start the day off right I usually can keep eating right throughout the day.
I've talked about my carb obsession in the past and how I struggle. Turning to carbs is just too easy. So I make up a batch of these banana pecan protein pancakes and keep them in the freezer to pull out and heat up in the morning. A higher protein breakfast helps to curb hunger for me.
We topped these waffles with more bananas and some pecans but a lot of days I change it up and top them with some strawberries or other fruit.
And YES, for those of you living with allergies, these are grain free and gluten free. But you won't know it.
Aaaaaaannnnd...if you love these but don't have time to make them up in the morning, this protein pancake recipe is another good one that you will enjoy.
Ingredients
- 1 ½ cups pecans
- 3 eggs
- 1 banana, mashed
- 2 tbsp honey, agave or maple syrup
- 1 tsp vanilla extract
- 1 tsp cinnamon
- ½ tsp baking soda
- Pinch of salt
Instructions
- Place pecans in food processor. Grind pecans until the pecans become flour like in texture and consistency. In a large bowl, mix together the pecans, eggs, banana, sweetener, vanilla, cinnamon, baking soda and salt until smooth.
- Heat a griddle over medium low heat. Spray the griddle lightly with coconut or cooking spray. Pour approximately ¼ cup batter onto the griddle per pancake. Cook the pancakes until the edges of the pancake are lightly browned and the middle of the pancake bubbles. Flip the pancake and cook an additional minute or two until done.
- Place all pancakes in a warm oven until ready to serve. To freeze pancakes, place cooked pancakes in a single layer on a baking sheet. Place pancakes in the freezer for 20 minutes, then transfer the pancakes to a Ziploc bag or airtight container to freeze for up to one month.
- Serve pancakes with maple or agave syrup, your favorite berries and extra pecans if desired.
