Most people would wonder why on turkey week I'm posting a beanless beef queso dip. Well...because. Leading up to and after turkey day are a plethora of football and basketball games that require some dip and chips. This recipe is sure to satisfy.
This has by far been one of the busiest few weeks and I know that the busiest ones are just around the corner.
My oldest just finished her school play. She was in Once on This Island. she did fantastic and it brought tears to my eyes to hear how much her voice has progressed this past year. In honor of her play, I try to give gifts that stick with a particular theme of the play. Last time was a chocolate rose and this time--a pineapple. I guess she said that it sat in her dressing room as their nightly mascot. Can't wait to figure out what to get her for Mary Poppins!
My son had his football banquet and it was awesome to hear how much his coaches appreciated his hard work and effort. Each coach had to say something about each player and it was incredible to hear how hard my son worked on and off the field to know and learn the game. I'm excited to see what he does next year with the work ethic that he has.
And the littlest is deeply involved in making a new home for her 18" dolls. We are transforming a bookshelf into a bedroom and kitchen for her dolls. She has picked wallpaper, done her chores, and done all her homework to earn the ability to work on this project.
On Thanksgiving Day the family will be coming but we want to make sure that the day starts out healthy. We have some roundups to help you out:
This meal works perfect for Thanksgiving, fall football and pretty much we use it throughout the year. Basketball season is around the corner. It works for that too!
Beanless Beef Queso Dip
- 1 cup milk (can substitute non dairy creamer)
- 16 oz shredded cheddar cheese (can substitute non dairy)
- 1 lb ground beef, cooked
- ½ tsp ground cayenne pepper
- 2 tsp paprika
- 1 tsp salt
- 1 15oz can no bean chili
- 3 tsp chili powder
- 2 tsp cumin
- 1 tbsp lime juice
- Tortilla chips (we love Tostitos Scoops--much easier to scoop up the dip)
In a saucepan over low heat, place all ingredients, stirring until smooth. Heat until cheese is melted. Serve with chips.
This meal can also be made in the slow cooker. Place all ingredients in the slow cooker and cook on low for approximately one hour.
