Bread in a Can--AKA Game Time Bread

September 11, 2014 by burntapple Leave a Comment

This bread has so many names in our house--BYU bread, bread in a can or game time bread. It's the perfect sized unique snack for college football games, basketball games, or NFL football games. It's warm, carbohydrate filled buttery bread at it's best and it's perfect when it's pulled hot out of the oven.

And the best part? The dough needs only a few minutes of rising time and you're done in under an hour from mixing time to cook time. And I promise people will think you've spent hours cooking fresh bread.

You're going to need some dye for this because we know you've got a favorite college or professional team you're cheering for when you indulge in this classic carbohydrate filled snack. (You'll burn the calories off cheering, we promise). We used natural food dyes for ours but you are welcome to use what you have. This part is optional but we go all out. So college colored bread is a must.

Get ready, because it's game time and you've got the best seat (and snack) in the house!

    Ingredients

      For the Bread:
    • 5 ¼ cups bread flour*
    • 3 tbsp sugar
    • 1 ½ tsp salt
    • 1 ½ tbsp yeast
    • 1 ½ tbsp oil
    • 2 cups hot water
    • 10.5-15 oz cans washed, rinsed and dried (we usually do about 12+ depending on the size)
    • For the Butter:
    • ½ cup butter, softened
    • 2 tbsp honey (if you use agave, decrease to 1 tbsp)
    • ½ tsp cinnamon
    • 2 tbsp Greek plain yogurt (or any brand of plain yogurt is fine)
    • ***You can half the recipe for less cans. You can also substitute unbleached all purpose flour instead of bread flour. It works really well.

    Instructions

    1. Lightly grease cans and set aside for later use.
    2. In a mixer bowl with the dough hook attached, stir together the flour, sugar, salt and yeast for approximately one minute.
    3. Add the oil and water and continue stirring for one more minute. Stop the mixer and scrape down the bowl if necessary.
    4. Turn on mixer to low and mix for five minutes. The dough should be sticky after five minutes. If dough is not sticky, add water one teaspoon at a time, stirring just until dough becomes sticky, then turn off mixer immediately.
    5. Divide the dough into two equal portions. Knead food coloring into the dough until evenly distributed. Roll dough into ropes and twist together. Place the twisted dough into the cans, filling approximately ½ way full. Allow dough to rise for about twenty minutes.
    6. Preheat oven to 350 degrees. Place the cans in the oven and cook for 15-20 minutes or until bread is done. Remove from oven, allow to sit until bread is warm. Serve with cinnamon honey butter.
    7. To make the butter: Place all ingredients in a mixing bowl. Turn the mixer to medium speed and whisk until butter mixture becomes light and fluffy. Top on bread or even sweet potatoes!
