    Cake in A Can

    Cake in a can is a fun way to enjoy cake on your next camping trip. Great for birthday parties too!

    The family reunion is over and it's time to get ourselves ready for our next trip to California. My dad passed away a year ago last April and my Mom has finally decided she would like to lay his ashes to rest in California next to my grandparents. It's the place I know my Dad would want to be.

    So I am heading down to California next weekend while the kids head to their grandparents house. I'll fly back the next day and meet them because it's my son's birthday. (Can't miss that!)

    Burying my dad again is actually a lot harder than I thought it would be. It was hard to bury him once, but the extended period of time feels like it's just opening up the same old wounds again. I've spent a year and a half trying to move forward, grieving and coming to the realization that my Dad was young and won't get to see his grandchildren grow older--at least in this life. In some ways laying him to rest gives us a sense of peace, in others it has utterly confused my children who don't understand why Grandpa is getting buried twice, and it has made me feel that this is really for my Mom.

    It's always nice to see family though and I love that we gather together and support each other at funerals and weddings. My family has a rich assortment of weirdness and I couldn't think of a better extended family in the world. My family is refreshing. We always have tons to talk about when we get together because we are all so different.

    For my husband's family reunion (not a funeral or wedding, but an actual real family reunion) we headed up to Brianhead area and rented a cabin for all of us. It was a great time. Every family is put in charge of a meal and dessert one night. I made german chocolate cookies and our famous salted caramel buttercream cookies for the adults. I also made a gluten free german chocolate cookie but you'll have to wait a few weeks before I have the recipe ready to post. We made  this cake in a can or cake in a tin can dessert for the little ones. They had such a great time decorating their cakes and eating them.

    Just a Note: Please use BPA free cans, and make sure you rinse and wash them thoroughly first before using.

    Cake in A Can

    Yield: 12 servings

    Serving Size: 1 can

    Ingredients

    • 1 recipe Funfetti cake mix, prepared (BurntApple), homemade cake mix or storebought cake mix, prepared
    • 8-12 clean cans (10 ounce cans)
    • Frosting
    • Sprinkles

    Instructions

    1. Preheat oven to 350 degrees. Lightly grease the insides of the cans.
    2. Mix up Funfetti cake mix according to directions. (Search Pillsbury Funfetti Cake Mix on our site, or click on the link below).
    3. Fill cans ½ of the way full with batter. Bake at 350 degrees for 20-30 minutes, or until cake springs back when touched in the middle and the top begins to brown.
    4. Remove from oven and allow cakes to cool completely before frosting.
    5. When cakes are cool, frost the tops of the cake with frosting, sprinkles and other decorations if desired.
    6. Don't forget to recycle your cans after enjoying!

    This recipe works with just about any cake mix you can think of. Just follow the instructions above. You can use gluten free cake mix too.

    Campfire Cooking Instructions: Wrap and secure the top of the can with tin foil. Place in the embers of the fire and bake, watching carefully to make sure cake does not burn. You can also arrange cans inside a dutch oven (do not cover if cooking in the dutch oven) and bake according to directions above. Be sure to arrange coals on the top of the dutch oven lid as well for even cooking. Bake time will vary depending on the heat of the fire and coals.

    Just a Note: For our reunion we made up frosting and put it in several different Ziploc bags and let the kids decorate the cakes themselves. We had lots of sprinkles too. It was a great activity for them. My friend used her homemade gluten free cake mix and said she had trouble getting the very center of the cake to rise but said that with frosting no one noticed. So know that different mixes may yield slightly different results but in the end frosting fixes everything.
