    It's already time for many of us to think about the kids going back to school. No offense, but who thought of putting kids back to school in August? My dad always remembered school starting after Labor Day because his birthday generally fell right around the first day of school. It's hard to start school during the middle of summer. The kids go to school for a week and a half  and they get another holiday. They really only start into homework and after school activities after Labor Day.

    Am I the only one who has a hard time getting into school mode before September?

    If you're like me and the thought of getting back into "school mode" doesn't sound appealing when it's 95 degrees outside, than let's talk trail mix. Last year we made peanut butter and jelly trail mix. This year we're talking caramel apple trail mix.

    It's easy, versatile and simple to throw together and into your lunch. It's made even easier with the help of Chiquita Apple Slices.     Caramel Apple Trail Mix

    Yield: 2 servings

    Serving Size: 1 cup

    Ingredients

    • 1 apple, cored and cut into bite sized pieces (can use 1 cup dried apples in place of fresh apples)
    • 1 cup mixed nuts (use what you or your kids will eat)
    • ½ cup peanut butter chips
    • ¼ cup dried cranberries or raisins
    • ½ cup caramels, cut into bites sized pieces* (*See Note)

    Instructions

    1. In a bowl, mix together the apple, mixed nuts, peanut butter chips, cranberries or raisins and caramels. (See note).
    2. Pour into individually sized mason or plastic jars and cover.

    Notes

    *If using Chiquita Bites Apples and Caramel Dip, cut the apples into bite sized pieces and mix with the nuts, peanut butter chips and cranberries. Pack the caramel dip seperately from the trail mix. Before serving, drizzle the caramel sauce over the trail mix. Enjoy this version of trail mix with a spoon.

      Sandwiches are my go to for lunches. I love to make fresh dough add fillings fry or bake, they delicious and convenient.

      Smooth mornings are a big deal for us. My daughter likes to sleep in if I let her no matter her bed time. I like to get her involved in picking out what she eats for breakfast from a few choices I give. Sometimes I ask the night before. She will eat anything she helps make so I like to get her to help when she is being moody or picky. She is almost 8 and she likes to have a say so in what she eats and wears. Definitely picking out food and clothes the day before helps for mornings to go smooth.

      When buying school supplies, I try to go through my house first to see if I have any supplies at home before I go and purchase the others.

      for after school, i like to make frozen grapes rolled in watermelon jello mix. also yogurt put into a ziploc bag, cut a little corner off, and dot onto waxed paper lined cookie sheets and pop in freezer. makes dippin dots made of yogurt that is more healthy than ice cream!
