Are you heading out camping this Fourth of July? Then try these cheesy beef tin foil dinners.
Growing up, my idea of camping was a hotel. Vacation means not having to worry about luggage, having someone else make my breakfast for me in the morning and coming home after a long day to find my bed made and warm towels waiting for me. Coming home means only having to unpack my suitcase.
After having kids though, I realized that they want (and LOVE) to camp. So I've consented to 24 hours of camping each summer. I've kept my promise. I also promise the kids that we will learn to make some really good campfire food. To keep it good, I used Cabot Reduced Fat Cheese, Alexia Waffle fries, and lean ground beef.
A delicious tin foil dinner filled with cheesy beef, waffle fries and green chiles.
Ingredients
- 1 package frozen french fries (we used Alexia frozen waffle fries)
- 1 pound lean ground beef or bison
- ½ cup (or one small can) diced green chiles
- 1 cup reduced fat cheddar cheese
Instructions
- Place meat or bison in a frying pan. Set heat to medium and cook meat until browned. Remove from heat.
- Divide the fries evenly among four pieces of aluminum foil that have been lightly greased. Top with ground beef, chiles and cheese.
- Place a piece of lightly greased tin foil over the top of the beef and fries. Seal the edges tightly.
- Place the packets in the campfire or on top of hot coals for approximately 10-15 minutes. Check the packets every five minutes to see if they are done.
- Remove from heat, open packets and eat.
