We love pizza at our house. I usually have several freezer pizza's ready to go for those nights that we are just too busy to make a nice stay at home meal. The kids always want barbeque chicken pizza and cheese pizza. I get really tired of making the same thing, so I made up this chicken fajita pizza.
I didn't tell the kids that I was changing up their routine. Sometimes with kids the element of surprise is the best thing.
The pizza isn't spicy, it just has a great zip to it.

Ingredients
- 2 chicken breasts, cooked and cut into strips
- 2 tablespoons olive oil
- ½ cup diced onion
- ½ cup diced green or red pepper
- 2 cloves garlic, minced
- 1 packet fajita seasoning (Frontier Naturals or Simply Organic are great brands)
- 1 cup salsa
- 2 cups (8 ounces) shredded Mexican cheese blend
- 3 tbsp chopped fresh cilantro (optional)
- Homemade pizza crust or premade storebought pizza crust
Instructions
- Note: If you are using a homemade pizza crust, you will want to roll the pizza crust to the size of the pan you are using. Preheat your oven to 450 degrees and place the crust in the oven to cook for 3 minutes. Remove and allow to cool before placing toppings on. This will prevent the crust from becoming soggy when you freeze/bake it.
- In a saucepan set to medium heat, place your olive oil, onion and green pepper. Saute for several minutes until onion and green pepper are tender. Add in the garlic and continue to saute for 1-2 minutes more.
- Spread the one cup of salsa evenly over the crust, then sprinkle the onion, pepper, garlic and chicken evenly over the mixture.
- Sprinkle the fajita seasoning over the pizza. (You do NOT have to use the whole packet--use as much as you want).
- Top the pizza with cheese.
- To Freeze: Wrap the pizza in heavy duty freezer foil and freeze.
- To Cook: Preheat oven to 400 degrees. If baking fresh without freezing, bake for 16-20 minutes, or until cheese is bubbly and crust is lightly browned. Remove from oven and top with fresh cilantro if desired. If cooking the pizza straight from the freezer, cook at 400 degrees for 20-25 minutes. You do not need to thaw the pizza prior to baking. Top with fresh cilantro if desired prior to serving.
