Nachos are one of our favorite foods. We love them for game time. We also consider them an essential "man food." These smoky chipotle chicken nachos are absolutely incredible. They've got the creamy taste that nachos should have, a spicy chipotle undertone and a sprinkling of black beans.
Chicken nachos are an absolute necessity in a man's world. They get you through those tough nail biting games, are a great pre-entree appetizer and lead the way for an exciting night of food.
Of course, you can just eat these as a meal. But if we're talking the Superbowl, this is just the warm up.
Ingredients
- 1 lb ground chicken or 2 cups shredded chicken breast, cooked
- ⅔ cup water
- ½-1 tsp chipotle
- 1 envelope taco seasoning (approximately ¼ cup taco seasoning if using homemade)
- ¼ cup softened cream cheese (we use Green Mountain cream cheese/greek yogurt blend)
- 3 tbsp chives, chopped
- 1 tsp mustard
- ½ tsp paprika
- 6 cups tortilla chips (or 14-16 oz bag)
- 1 (14oz) can black beans, rinsed and drained
- 1-2 cups shredded Monterrey/cheddar blend cheese
- Additional toppings: Sour cream, chopped tomatoes, cilantro, salsa
Instructions
- In a skillet, place the water, taco seasoning, and chipotle. Heat to boiling.
- While the water and taco seasoning are coming to a boil, mix the cream cheese, chives, mustard and paprika into the chicken mixture. Mix the taco seasoning mixture and chicken together, stirring until combined.
- In a greased 9x13 inch pan layer half of the chips, chicken mixture, half the black beans and half the cheese. Layer with another layer of chips, chicken mixture, black beans and cheese.
- Bake at 350 degrees for 15-20 minutes or until cheese is melted and bubbly. Serve topped with additional toppings if desired.
