If I didn't win you over yesterday with our chipotle chicken nachos and make you run out to buy chipotle seasoning, than today's chipotle chicken sourdough grilled cheese will definetely inspire you to become a chipotle fan.
The spicy chipotle taste is offset by the light tangy flavor of the sourdough. The cheese and chicken really compliment the sandwich and make it a winner! I made these for my husband when he came home from work. He prides himself in being a sourdough bread lover. So I'm always trying to come up with different ideas for sourdough bread for him. He came home, took a bite without even thinking or looking at what he was eating and all of a sudden shouted out, "Wow, WOW this is good!! It's got a kick to it!"

Although I think it's funny that he just took a bite without looking. He usually has this ritual of investigating and guessing what secret healthy ingredient I've thrown into his food. But not this week. This week is HIS week.
Ingredients
- 4 slices sourdough bread
- ¼ cup Caesar or ranch salad dressing
- 1 cup cooked chicken, chopped into bite sized pieces
- ¾ cup shredded cheddar cheese
- ½-1 tsp chipotle chile powder (*adjust to taste preference)
- Kale (optional)
- Softened butter
Instructions
- Preheat grill to medium heat. Spread a knifefull of the softened butter over one side of each of the slices of bread to coat evenly. `
- In a small bowl stir together the dressing, chicken, cheese and chipotle Spoon mixture generously onto the interior of two pieces of bread.
- Press the remaining tops of the bread onto the chicken. (Make sure the buttered sides are facing out for grilling). Place the sandwiches on the grill and heat for several minutes or until cheese begins to melt and the bread is browned. Flip the sandwiches and cook an additional couple of minutes until cheese has finished melting and bread is browned nicely. Remove from heat and serve.
- Optional: You can place a kale leaf in the sandwich prior to cooking the sandwich for a different variety.
