    Coconut Pineapple Lime Ice Cream + Giveaway

    This coconut pineapple lime ice cream is incredible! Coconut milk and pineapple puree make the ice cream deliciously sweet and creamy while lime zest adds a little bit of a tangy undertone. The toasted coconut throughout compliments the ice cream perfectly.

    The cute ice cream bowls you see are from Edward & Son's. I found them at my local Sprouts. They are gluten free and only 10 calories a piece and get rave reviews each time I serve them. I love that they are small enough that I can fill them and it's considered one serving size of ice cream. The coconut featured in today's recipe is also from their company. You can find a whole array of organic and gluten free sugar cones, sprinkles and other fun ice cream toppings for your next gathering at a reasonable price.

    Coconut Pineapple Lime Ice Cream

    Ingredients

    • 2 14oz cans coconut milk (use either two cans of full fat, or one can full fat, one can lite)
    • 2 cups pineapple puree (you can use fresh pineapple or canned)
    • Up to ½ cup coconut sugar (can substitute other sugar here. Adjust the sugar amount depending on how ripe the pineapple is).
    • Pinch of salt
    • Zest of one lime
    • ½ cup toasted coconut

    Instructions

    1. In a bowl, mix together the coconut milk, pineapple puree and salt. Freeze according to ice cream maker instructions.
    2. During the last five minutes of churning, pour in the toasted coconut and lime zest.
    3. Pour the finished ice cream into containers and freeze for at least an hour before serving. Freeze any remaining ice cream in an airtight container.
