    {Copycat} Healthy Chilis Queso Dip

    Copycat healthy Chilis queso dip has fresh beef, real cheese, chili and spices to make a delightfully smooth queso dip for your next event! 

    It's been awhile since I've posted a copycat recipe. So today, it's a copycat recipe for everyone. Gametime is big, BIG in our house. We have our favorite teams we cheer on in our house. The menu usually starts in the morning when I'll ask the kids at the breakfast table what they want for the game that night. Then I text my husband. Then I stew about what ideas they've come up with until about lunchtime when I get home from school and head to the store to pick up what we need.

    A couple of hours before the game I start prepping for that nights meal. Dinner and dessert must finish before the game starts. Sometimes I'm trying to get ready during the game but most of the time I try to finish beforehand so I can watch the game.

    Chili's is one of our favorite places to get out and the Chili's queso dip is a favorite to order when we have friends with us. The only problem? I HATE the processed cheese in it. There is nothing better than real cheese in my opinion. So I looked for recipes that made the recipe healthy and all the ones that I found had processed cheese. This recipe uses real cheese and real beef.

    {Copycat} Healthy Chilis Queso Dip

    Ingredients

    • 1 lb lean ground beef or bison
    • 1 15 oz can chili (meat, no beans is most recommended. I used vegetarian).
    • 2 cups shredded cheddar cheese (can use reduced fat)
    • 1 cup milk
    • 2 tsp paprika
    • ½ tsp. ground cayenne pepper
    • 4 tsp. chili powder
    • 1 tbsp lime juice
    • ½ tsp. ground cumin

    Instructions

    1. In a saucepan, cook the ground beef or bison on medium heat until browned and cooked thoroughly.
    2. Pour in the can of chili, milk, lime juice, cheese and spices. Cook on low heat, stirring until smooth and cheese is melted.
    3. Serve with chips.
    4. NOTE: Got a bean-a-phobic? I placed the cooked meat and can of chili in the food processor and pulse grinded several times to help the mixture have a little smoother consistency and to break up some of the bigger chunks of beans.
