    Double Chocolate Salted Caramel Cookies

    A drool worthy cookie? Check.

    Salted caramel? Check.

    Loads of chocolate? Check.

    These cookies pretty well have it all. A chocolate salted caramel cookie that is amazingly delicious.

    The cookies are filled with double chocolate and taste like a brownie laced with a hint of salted caramel.

    Of course, you can't EVER have enough salted caramel, so I drizzled even more salted caramel on top. You just can't have enough in my opinion. See picture above? Not enough. See picture below? Enough. Grab your salted caramel and let's start making some cookies! These Double Chocolate Salted Caramel Cookies are the best!

    Double Chocolate Salted Caramel Cookies

    Yield: 24 cookies

    Chocolate and salted caramel lovers unite! These cookies are the perfect combination of both.

    Ingredients

      For the cookies:
    • ½ stick unsalted butter
    • 4 oz semi sweet or dark chocolate, chopped
    • ½ cup unbleached all purpose flour
    • ¼ cup cocoa powder (do not use dutch process)
    • ¼ tsp baking soda
    • ¼ tsp salt
    • ½ teaspoon pure vanilla extract
    • ¾ cup sugar
    • 1 egg
    • ¼ cup salted caramel sauce
    • For the glaze:
    • 2 cups powdered sugar
    • ½ cup salted caramel sauce (recipe here or you can use store bought)
    • 2 tablespoons milk

    Instructions

    1. Preheat oven to 325 degrees.
    2. Lightly grease a cookie sheet. Over low heat on the stove in a saucepan, melt the chocolate and butter. You can also microwave the chocolate and butter together for thirty seconds. Remove from the microwave, stir and then microwave for thirty seconds more until melted.
    3. Transfer the chocolate to the bowl of your kitchen mixer. Add the sugar, egg, vanilla and caramel sauce on medium speed until mixture is combined. Stop and scrape the bowl if necessary. Turn the mixer to low and slowly add in the flour mixture. Mix until all flour has been blended well.
    4. Roll one tablespoon of dough into a ball and place on a cookie sheet. Continue rolling dough,placing cookies two inches apart on the baking sheet.
    5. Bake cookies at 325 degrees for approximately 9-11 minutes or until the tops have cracked and cookies have spread. Remove from heat and allow the cookies to cool on the baking sheet for approximately five minutes before moving to a wire rack to finish cooling completely.
