So much has been going on lately. So much!
I started my masters program. It's harder than I thought. I stress a lot because so much has changed in such a short time in my personal life that I hope that I'm able to handle going to school too. I think the thing that stresses me out the most is wondering if I can do everything. Life has just been overwhelming and it seems like the stress never stops. Ever.
I'm also back to hitting the trails and the canyon again. I have a HUGE wildlife phobia. HUGE!!! The dog and I were on a trail by my house and I heard some rustling in a bush. Freaked out I worried something big was coming after me. The dog started to get excited and it was harder to keep her at a heel. All of a sudden the rustling stops and out of the bushes it runs across the trail. I freaked out!! And then I saw that it was a tiny mouse. That sounded like a cougar.
Of course, this snake decided to cross my path. And it was the scariest thing ever because it's a pretty public trail. And that was a HUGE snake. It was huge to me. You can see it right? It was like 12, er, three feet long.
With all the busy days, school coming to an end for the kids and all the crazy activities going on and schedules as jam packed as they can be it's nice to think that summer is around the corner. But for now, making nice fancy desserts just doesn't happen. So I'm introducing you to the easiest dessert you will ever make.
I call this "faux peanut butter cup."
And the fancy version, "healthier peanut butter dessert."
I know what you may be thinking. Stop. 🙂
Ingredients
- 1 spoon
- 1 jar peanut butter
- mini chocolate chips
- For healthier version, add a banana
Instructions
- Take your spoon, dip it in the jar of peanut butter. Sprinkle chocolate chips on top (we used Enjoy Life). Eat, repeat.
- For a healthier version, spread peanut butter on a banana. Top with mini chocolate chips.
