    Easy Enchilada Dip + Almost Done!

    This easy enchilada dip uses just a few ingredients and doesn't require any processed cheese!

    I just finished my last class this week. Now it's just my internship class and then in April I finish up and am done with school. Starting this whole process two years ago seemed overwhelming and daunting. My life was literally falling apart around me and I was wondering how in the world I was going to be a single mom, go to school and go through the legal process. It was a daunting task but two years later I can look back and say I made it and I will NEVER do this again. I am so exhausted and ready for a break.

    However, there is still one month left of school and that means that meals must still be easy as I finish up. i like to ask the kids for their input. My six year old when asked what she wants for dinner usually says she wants beans and rice or chips and dip. Or spaghetti. Or broccoli. I am not sure where she gets these wierd combinations.

    It could be from the dog. The dog won't eat carrots. Ever. I'm surprised there is kibble still left in her bowl. Usually she does such a better job of pulling the kibbles out and leaving just the carrots.

    The other day I got the time to actually hit the massage bed after my workout.

    I enjoyed all ten minutes productively.

    And then it was off to work. We had a career day at our school. I got to babysit this poodle for a few minutes.

    And the reason I needed a massage before career day? When you only get a few feet of the bed to yourself, you don't wake up feeling too good.

    Oh the joys of being a dog owner to a dog that hasn't learned she's not a human. She's crazy when she's working in the field or running and embraces her dog side then, but at home she gets confused and often mistakes herself for a human.

    There is no mistaking this beef enchilada dip though. It is delicious and simple to make. I love making it as a quick weeknight dinner. If you don't want to make it in the slow cooker, just make it stovetop on medium heat and it's even faster.

    Easy Enchilada Dip

    Ingredients

    • 1 lb ground beef
    • 2 cups enchilada sauce
    • 1 can (15oz) black beans, rinsed
    • 2 tbsp taco seasoning
    • 4 oz reduced fat cheddar cheese (can use regular cheese)
    • 4 oz reduced fat monterrey jack cheese (can use regular cheese)
    • 8 oz reduced fat cream cheese (can use regular)
    • Tortilla chips

    Instructions

    1. Brown the ground beef, draining after cooking. Meat is cooked when no longer pink.
    2. Add the ground beef, beans, seasoning, and cheddar and monterrey jack cheese to a slow cooker.
    3. Cook on low for 2 hours.
    4. Stir in the cream cheese, stirring until cheese is melted and cream cheese is fully incorporated.
    5. Serve dip warm with cheese.

    Notes

    Don't have time for the slow cooker? Drain the meat and then return to the stovetop. Add the remaining ingredients to the saucepan and cook over medium low heat until cheeses are melted, stirring until smooth. Serve.
