This easy mediterranean pizza is one that I make up and freeze for nights that I just don't want to cook. It's so nice to have something easy to pop in the oven on nights we're out playing and I'm too tired to think about what to make.
But let's be honest. Lately that's been a lot of nights. The weather has been hot, thinking about what I can and can't eat has been exhausting and I just get tired of thinking about food. (Seriously NEVER thought those words would EVER come out of my mouth).
The flavors come together well and the pizza is great at filling you up with healthy veggies, chicken and rich mediterranean flavors.
It's pizza night!
Ingredients
- 1 pizza crust (we used Udi's GF pizza crust but any will do)
- Cream cheese (we used Tofutti dairy free cream cheese but any will do)
- 1 packet mediterranean seasoning (we used Simply Organic Mediterranean Herb)
- 1 cup cooked, chopped chicken
- 1 zucchini, thinly sliced
- 1 yellow squash, thinly sliced
- 1 cup wilted spinach, chopped into bite sized pieces
- 1 tomato, chopped into small bite sized pieces
- Mozzarella, goat or feta cheese (1-2 cups depending on the size of the pizza)
Instructions
- Preheat oven to 350 degrees.
- Spread a thin layer of cream cheese evenly over the pizza crust. Sprinkle a generous amount of the mediterrenean herb seasoning evenly over the pizza. Evenly distribute the chicken, zucchini, squash, spinach, tomato and cheese over the pizza.
- If freezing, immediately transfer to a freezer Ziploc bag and freeze for up to one month.
- If baking, place pizza on a baking sheet. Bake for 15-20 minutes at 350 degrees. Pizza is done when cheese is melted and crust is slightly browned.
