There are trends that I just don't "get." Cauliflower rice is one of those trends. Cauliflower rice is pretty easy to make. You just dump a head of cauliflower into a food processor and blend it until it is the consistency of couscous. You can then cook with it and pretty much make any kind of recipe you could ever want or need that's made with a potato or flour. I've seen everything from cauliflower pizza crusts to cauliflower mashed potatoes.
Here's my issue:
IT STILL TASTES LIKE CAULIFLOWER.
I think it's great that it supposedly has less calories and is healthier for you. That's all well and good.
BUT IT STILL TASTES LIKE CAULIFLOWER.
Let's face it. Everyone has their vegetables they just choke down. Cauliflower is totally that vegetable to me. I take a bite of mashed potatoes, I want them to taste like mashed potatoes. Not like cauliflower. I even tried this cauliflower mac and cheese from Luvo. It was good. But this one had cauliflower chunks in it. I still ate it and thought it was delicious but would've blended the cauliflower better.
So I was skeptical when I made some garlic herb chicken that this would even be decent when combined with some garlic herb cauliflower rice. I had low hopes for this one.
But when you add a decent amount of spices, butter and some cheese anything and everything tastes good. And garlic is delicious so should be included with every meal possible.
I loved this recipe and will definetely try it again with the kids. I may try doing half cauliflower and half rice for them until they get used to the taste.
Over the weekend I had the chance to get out and go back home for a very quick trip. I had plans to see family but then ended up getting out there and molding myself to the beach for two days. I didn't realize how tired I was and how much I needed to recharge. I always feel bad I don't get a chance to see as many family members as I want but I was tired and can't believe how strong I've been going over the past year and a half. This is the first "me" trip I've taken in a long, long time and just laying in the warm sun listening to the crashing waves of the ocean. Lot's of ocean side naps happened.
Of course I came home and someone acted as if she had been severely neglected.
It took several runs to make her happy again. And an off leash free bird chase over at the park. And a trip to doggy play group.
At the end of the dog play group I opted for this buttery garlic herb cauliflower rice. Dig in!
Ingredients
- ¼ cup butter
- 2 tbsp oil
- 4 cloves garlic
- 1 cup yellow onion, diced
- ¾ cup chicken broth
- 1 tbsp parsley
- ½ tbsp basil
- ½ tbsp oregano
- ½ cup parmesan cheese
- 6 cups riced cauliflower
- Salt and pepper to taste
Instructions
- In a frying pan set to medium heat, cook the butter, oil, garlic and onion and saute until onion is tender and garlic has browned. Add in the chicken broth, spices and cauliflower, cooking until cauliflower is tender. Salt and pepper to taste, then sprinkle with parmesan cheese prior to serving.
