This garlic herb chicken sheet pan dinner is one way to start the year off right eating healthy. One pan or one pot meals are extremely easy to make and take very little prep time. It's also a very easy way to make a healthy meal. Often if there are extras I'll use them for lunch the next day.

If you are a huge fan like I am of sheet pan dinners and healthy sheet pan meals, try some of these we've made in the past:
This garlic herb chicken has a great butter garlic flavor. It is made easier with a seasoning packet. I picked up a Simply Organic Garlic & Herb Vegetable Seasoning Packet.
GARLIC HERB CHICKEN SHEET PAN DINNER
⅓ cup chicken broth
¼ cup butter, melted
2 cloves garlic, minced
1 packet Simply Organic Garlic & Herb Vegetable Seasoning Packet (if no seasoning packet, use additional 2 cloves garlic, mined, 2 teaspoon parsley, 1 teaspoon thyme, 2 teaspoon rosemary, ½ teaspoon salt, and pepper to taste)
4 chicken breasts
1 pound potatoes, chopped
1 pound green beans
DIRECTIONS:
preheat oven to 400 degrees.
In a small bowl, stir together the chicken broth, butter, garlic and seasonings.
Arrange the chicken and potatoes on a cookie sheet lined with tin foil or parchment paper. Brush the chicken with the garlic and herb mixture. Lightly salt and pepper the potatoes.
Cook for 20 minutes at 400 degrees. Flip the chicken and brush with the garlic and herb mixture. Cook an additional five minutes then add the green beans. Cook for an additional fifteen minutes. Check chicken and potatoes for doneness. Cook an additional few minutes if needed, brushing with additional glaze if needed.
Remove and serve immediately.
