Every year around Halloween time, a little ghost comes and drops treats secretly at neighbor's doors. when the ghost visits your door, you must give treats to two other families.
this year, we decided to "ghost" families by giving them some of these great treats. my kids got so excited this year to deliver the treats. we parked the cars several houses away from the people that we chose and walked to deliver the treats. my daughter decided she wanted to take the first house. my little boy and i hid around the corner. several seconds after hiding, she comes bolting around the corner...treatless.
"i got too scared Mom, could you ring the doorbell??"
so I ran back and saw the treats sitting on the porch. i knocked and ran back to hide in the bushes with the kids. my little boy waits about five seconds before saying, "i think I heard her get the treats Mom. Lemme go see." he runs out from the bushes we were hiding in. "Yup! She got them. and she waved to me too. Okay guys let's go to the next house."
we went to the next house, this time my daughter and I waiting on the side of the house. this time it went a little smoother. until my little boy came running like the wind around the corner-- face showing determination, arms pumping, legs flying. motion detector light turning on. so we weren't the most secretive family. but we got into the car and laughed until we cryed as we relayed highlights of our story to each other.
we got home and tried to relay the story to my husband. but we were laughing too hard to even get the words out. but it felt great to be able to do something nice for our neighbors.
CHOCOLATE CHIP BROWNIES W/ A HEALTHY TWIST 🙂
⅓ cup cocoa
⅔ cup brown sugar
⅔ cup white sugar
½ tsp salt
½ tsp baking powder
⅔ cup navy bean puree (can substitute oil if no beans)
3 eggs (You can use egg replacer if desired. I used ener-g)
1 teaspoon vanilla
1 cup chocolate chips
Preheat oven to 350 degrees.
In a mixing bowl, combine dry ingredients. Add wet ingredients just until blended well. Fold in chocolate chips. Pour mixture into an 8x8 inch greased baking pan. Bake at 350 degrees for 25-30 minutes. Allow brownies to cool before cutting. Makes 16 brownies.
*Note: This recipe can easily be doubled and placed in a 9x13 inch pan. Adjust baking time to 30-35 minutes.
Why beans?? Beans add fiber, reduce calories and fat and actually make the brownies taste really moist and delicious!! They are a great healthier alternative to oil! You can use black beans in brownies, or white navy beans for lighter recipes. i used navy beans in this recipe.
NESTLE TOLLHOUSE CHOCOLATE CHIP COOKIES
These cookies came right off the back of the package. I'm not ruling them out as my favorite chocolate chip cookie, but they were pretty good and worked well for our ghostly treat! We sprinkled ours with some fall sprinkles before cooking.
2 ¼ cups all-purpose flour (increase to 2 ½ cups if higher altitude)
1 teaspoon baking soda
1 teaspoon salt
1 cup (2 sticks, ½ pound) butter, softened
¾ cup granulated white sugar
¾ cup packed brown sugar
1 teaspoon vanilla extract
2 cups (12-ounce package) Nestle toll house semi-sweet or milk chocolate morsels
1. Combine flour, baking soda and salt in small bowl.
2. Beat butter, granulated sugar, brown sugar and vanilla in large mixer bowl. Add eggs one at a time, beating well after each addition; gradually beat in flour mixture.
3. Stir in morsels and nuts. Drop by rounded tablespoon onto ungreased baking sheets.
4. Bake in preheated 375F oven for 9 to 11 minutes or until golden brown. Let stand for 2 minutes; remove to wire racks to cool completely.
