This gluten free banana bread for one is ready in thirty minutes and is the perfect portion!
When you are the only one who is eating gluten free or with dietary restrictions it can be really hard to make yourself an entire loaf of bread or an entire cake.
For one thing, you just KNOW you'll eat more than you want to. It's a given. Although the chocolate cake to yourself thing isn't something to complain about during finals week.
Of course, you can just get one of these to help combat the calories. This dog is a MACHINE! She is ALWAYS ready for a workout. She bugged me all day while grading papers so I put on my running shoes and we went for a run in the light rain. Of course, halfway into the run it turned into a downpour and by the time I got home I looked something like....
The dog changed her mind halfway in to the run but it was too late so by the time we returned home I had squeaky clown feet from the amount of water in my shoes and I was carrying around ten extra pounds of water weight (seriously, I wore an oversized, baggy SWEATSHIRT running (I was cold)). And that sexy supermodel Instagram look with the rain pouring down and the perfect makeup? That's a LIE!! I looked like a wet dog with a fifty pound sweatshirt, squeaky clown shoes and raccoon eyes. Yeah, that's HOT!
At least there was some of this delicious banana bread waiting for me at the end of my run. The dog didn't get any since she MADE me run.
The single serving size of this gluten free banana bread was the perfect portion for a post run in the cold workout.
Ingredients
- ¼ cup gluten free flour
- ¼ teaspoon baking soda
- ½ teaspoon ground cinnamon
- Pinch salt
- 1 banana, mashed
- 2 tablespoon sugar (we used coconut sugar)
- 1 tablespoon butter, melted
- 1 egg white
- ½ teaspoon vanilla extract
Instructions
- Lightly grease a ramekin, then set aside. Preheat oven to 350 degrees.
- In a small bowl, mix all ingredients together until smooth.
- Pour the batter into the ramekin.
- Bake for 22-30 minutes or until a toothpick inserted into the center of the bread comes out clean.
- Remove from oven, allow to cool slightly before eating. serve topped with additional butter if desired.
