We used drop biscuits in this recipe. The original recipe uses pre made refrigerated biscuits so for ease we used drop biscuits but rolled biscuits work too.

Gluten Free Breakfast Biscuit Bake
Ingredients
- 1 cup gluten free flour blend
- ½ tablespoon baking powder
- ½ teaspoon salt
- ½ cup heavy whipping cream can substitute dairy free
- ¼ cup cold butter cut into tiny pieces
- 2 tbsp sugar
- 2 teaspoon ground cinnamon
- 1 cup powdered sugar (confectioners sugar)
- 4 tablespoon butter, melted dairy free can be substituted
- 1 tablespoon milk dairy free can be substituted
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 375 degrees. Lightly grease an 8x8 inch pan and set aside.
- In a small bowl, mix together the gluten free flour, baking powder, and salt. Fold in the butter and stir until biscuits are coarse. Add in the whipping cream and stir until dough becomes sticky. (Depending on your flour blend you may need to add a tablespoon at a time or so of whipping cream).
- in a small bowl, mix together the cinnamon and sugar. Drop the dough by tablespoons into the sugar mix and toss to coat. Place the dough into the baking dish. Continue until all dough is arranged in the pan.
- Bake for approximately 20-23 minutes in a 375 degree oven until biscuits are lightly browned on top, puffed and cooked through. Remove from oven.
- Whisk the melted butter and powdered sugar in the bowl. Add the milk and vanilla, stirring until it becomes frosting. Spread evenly over the baked biscuits.
- Serve warm.
