Preparing
In the mug, mix together the cake mix, water, oil or applesauce and chocolate chips (optional) until smooth. Once combined well it's time to bake!
Add wet ingredients and mix until combined
Place it in the microwave and heat on high power for 1 minute and 10 seconds. Your cake should be cooked in just over a minute; let it stand for a few minutes before serving. Enjoy!
Microwave the mug cake until it’s set on top
Carefully remove the mug cake from the microwave and let it cool for a few minutes before serving. You can top it with fresh fruits, frosting or your favorite ice cream. Enjoy this delicious Valentine's Day treat!
Let your mug cake cool before topping with vegan cream and berries of your choice, then enjoy!
Once done, carefully remove your mug cake from the microwave using heat-resistant mitts. Let it sit and cool down for a few minutes before serving. For a fancy touch, you can top it with vegan cream and berries of your choice. Feel free to experiment with other topping ideas of your liking. Enjoy this simple yet tasty Valentine's Day treat with your special someone!
Frosting
If you NEED frosting (yes it is a thing to need frosting!) there are a couple of different easy frostings to make for this recipe:
- In a bowl mix together ¼ cup powdered sugar, 1 tablespoon cocoa powder and 2-3 teaspoon of water in until frosting forms. Place on top of cooked mug cake.
- As soon as you remove your cake from the microwave, place 1-2 tablespoon of dairy free chocolate chips on top of the cake. Allow the chocolate to melt, then spread over the top of the mug cake.
- My kids love putting a couple of Ghiradelli chocolate squares on the top of their mug cake as soon as it comes out of the microwave. Then they spread the chocolate over the top. You can put a caramel chocolate, mint chocolate or regular chocolate to add a little different taste to your mug cake!
Storing
I've never actually stored a mug cake before. I feel like this gluten free chocolate mug cake shouldn't be stored. It should be eaten nice and hot and fresh right out of the microwave so you get to enjoy all that good chocolatey fudgy taste! Isn't that why you're making a cake in three minutes or less with just three ingredients?

FAQ
Sorry, got side tracked by the chocolate. Here are some answers to your questions!
Yes you can. There are plenty of gluten free chocolate cake mixes available at major retailers or your local health food store. I provided a link above to our homemade gluten free chocolate cake mix. It's equivalent to a box of chocolate cake mix.
I used a standard coffee mug.
Yes you can! You will need to adjust the cooking time if you place it in a larger mug like a soup mug. Typically it will require about a minute and thirty seconds to two minutes. I would NOT recommend putting double the recipe into a standard coffee mug. It might overflow. (Personal experience-the kids have tried it and left beautiful messes in the microwave!)
Applesauce has lower fat and less calories than oil, so a lot of people like to use that instead. You can use whichever you like. The oil and applesauce act as a binder for the cake.
