These gluten free skillet blondies are not disappointing nor do they have that gluten free taste. BONUS!
I almost ate the whole pan by myself--not hard to do when you're the only one in the family eating gluten free. The past couple of weeks have been really rough. Life has thrown more curveballs than I can catch. I've been sick again too from all the stress and once I began to turn the corner and started feeling better I knew that I wanted....chocolate.
It's my favorite food group to drown my sorrows and stress into. Chocolate listens. It understands. It KNOWS me.

Ingredients
- 6 tablespoon butter
- 1 cup coconut sugar or brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup flour
- ½ teaspoon baking powder
- ½ teaspoon salt
- 1 cup chocolate chips
- ½ cup chopped walnuts
Instructions
- Preheat oven to 350 degrees. Lightly grease your skillet (if you don't have a skillet I use an 8" or 9" round pan).
- In a bowl of a mixer, cream the butter and sugar on medium speed for 2-3 minutes, or until light and fluffy.
- Turn mixer to low, add the egg and vanilla, stirring until blended.
- Add the flour, baking powder and salt, continuing to mix until combined.
- Turn mixer off, fold in the chocolate chips and walnuts.
- Pour the mixture into the skillet or pan, using a spatula to evenly spread the batter in the pan.
- Bake at 350 degrees for 20-25 minutes, or until lightly browned around the edges and the center is cooked.
- Remove from oven, cut while warm into pieces. Serve topped with fresh ice cream and whipped topping if desired.
