    Greek Yogurt Cookies with Greek Yogurt Frosting

    Greek yogurt cookies with greek yogurt frosting are delicious and sweet with a glass of cold milk and a good book. These taste just like the sour cream cookies your grandma used to make!

    Parenthood is not all that it is cracked up to be. I liken it to marriage. You see that starry eyed new couple walking down the aisle and think, "they have NO idea!" But then you remember when it was YOU walking down that aisle and you were full of hope and ideas of how your marriage was going to be different from everyone else. Fast forward ten plus years, give yourselves a few marital "dents" and now you're seasoned, right?

    And it's the exact same with your kids. You hold that newborn in your arms in the hospital and they are so perfect and lovely. Fast forward, bring them home and it's now a screaming newborn that has. not. stopped. crying. for. hours. HOURS! Fast forward ten plus years and you've gone through the cute preschool years, fun little early elementary years and now you've got a strong willed, strong minded and some might even say a tab bit stubborn pre teen.

    If you hadn't gone into some of the hardest things in your life a little blindly, would you have gone into them at all?

    NO!

    None of us would I think. Things that are hard always require us to take a deep breath, swallow and take that first step forward or backward. We can face it head on, or not face it at all. We only have two directions in life to go.

    Since I am in the throes of raising my first preteen girl there are a lot of times I have to step forward blindly and hope I'm doing a good job. Your first is always hard, right? I disagree. All of my kids are hard in their own respect and are all different.

    To handle some of the hardest nights of parenthood I have friends who say a glass of wine and a good movie are their cure. Not me. I want cookies. I think I will always want cookies.

    These greek yogurt cookies are perfect for unwinding with. These cookies taste a lot like the sour cream cookies your grandparents and parents used to make. They are incredible, and I even made a delicious greek yogurt buttercream to go with it. I couldn't keep my fingers out of the frosting.

    Greek Yogurt Cookies with Greek Yogurt Frosting

    Yield: 20 cookies

    Ingredients

      For the Cookies:
    • ¼ cup butter
    • ¾ cup sugar (can substitute your sugar of choice if desired)
    • 1 egg
    • ½ cup nonfat plain greek yogurt
    • ½ tsp vanilla extract
    • 1 ⅓ cups unbleached all purpose flour (can substitute white whole wheat flour)
    • ¼ tsp baking soda
    • ¼ tsp baking powder
    • ¼ tsp salt
    • For the Frosting:
    • ¼ cup butter, softened
    • 1 ½ tbsp nonfat greek yogurt
    • 1 tsp honey
    • 1 cup powdered sugar

    Instructions

    1. Preheat oven to 350 degrees. Lightly grease a baking sheet then set aside.
    2. In the bowl of your mixer, cream the butter and sugar for several minutes on medium speed until light and fluffy. Turn mixer to low and stir in the egg, yogurt and vanilla.
    3. Stir in the flour, baking soda, baking powder and salt, continuing to mix until smooth.
    4. Drop dough by rounded tablespoons onto the baking sheet leaving several inches of space between cookies. Bake at 350 degrees for 8-9 minutes or until edges are lightly browned.
    5. Remove cookies from oven and allow to set on the cookie sheet for several minutes before moving cookies to a cooling rack to finish cooling completely. Frost cookies when cool.
    6. To Make the Frosting:
    7. In the bowl of a stand mixer stir together the butter, yogurt and honey. Slowly add in the powdered sugar until frosting is formed. Lightly frost each cookie and allow frosting to set.

    Notes

    Cookies can be placed on a baking sheet then placed in a freezer for twenty minutes to "flash freeze." Move cookies to an airtight Ziploc bag to store. Cookies can be stored in freezer for up to one month.
