    Grilled Apples and Pepper Jack Cheese Sandwich Recipe

    Grilled apples, fresh pepper jack cheese, lettuce and mayo make for one delicious cheese sandwich recipe.

    There is less than a week until the kids are not mine anymore. They will spend eight hours a day with teachers, friends and learning. While they are excited, it's also a bittersweet time for me. I love having them home, love the freedom of going places with them. Summer is so fun, and I'm sorry, but it just isn't over yet. I still can't wrap my head around the fact that they go back to school for a only a week before Labor Day and another vacation. Since they don't do much of anything that week, just let me keep them another week. I only get to have them for so long until they are grown and gone. And it is just going by too fast.

    In the meantime I'll enjoy this last week and keep to quick and easy lunches like this grilled apples and pepper jack cheese sandwich. It is a delicious cheese sandwich recipe that takes only minutes to make.

    And then I'll take the kids swimming.

    Grilled Apples and Pepper Jack Cheese Sandwich Recipe

    Ingredients

    • 2 pieces sandwich bread
    • 1 apple, sliced into ¼ inch slices
    • 1 slice pepper jack cheese
    • Lettuce, Tomato, Sprouts
    • Mayo

    Instructions

    1. In a pan or on the grill, place the apples. Grill until browned on one side, flip and grill until apples become lightly browned on the other side. Remove apples from grill or pan and place on a piece of bread. Place the slice of pepper jack cheese on top, followed by lettuce and tomato. Spread the remaining piece of bread with mayo if desired and place the remaining piece of bread on top, mayo side down.
