    Grilled Barbeque Chicken Pizza

    This quick and easy grilled barbeque chicken pizza is filled with the rich flavors of cheese, onion, barbeque sauce and bacon and completed with a rich smoky flavored grilled pizza crust. 

    Labor Day weekend is almost here and that typically signals the end of summer.

    You also should not wear white clothing after Labor Day. Seriously, pack it up. Except those of you like myself who think yoga pants are stylish. Than you can wear white after Labor Day. The rest of you, no.

    Unfortunately, Labor Day also signifies the end of summer. While fall football and tailgating parties keep grilling alive, the typical weeknight meal starts to become one that can be made quick and easy as many of us shuttle kids to and from soccer practice, music lessons and school. Even when we didn't have kids we seemed to always have things going on during the weeknight. Weekends became grilling time.

    Can I urge you to NOT cover up the grill just yet?

    This grilled barbeque chicken pizza is divine. It needs you. And it's perfect for this weeks football game. BBQ Grilled Chicken Pizza needs to be eaten at your next game!

    Grilled Barbeque Chicken Pizza

    Ingredients

    • Pizza Crust (enough to make one pizza)--Gluten free, whole wheat or homemade
    • ¼-1/2 cup barbeque sauce
    • 2 cups cooked and shredded chicken
    • 1 cup mozzarella cheese
    • 1 cup cheddar cheese
    • ¼ cup red onion, diced
    • ¼-1/2 cup cooked and chopped bacon

    Instructions

    1. Turn the grill to medium high heat. Take a grill brush and brush olive oil onto the grill grates.
    2. Prepare all of the toppings for the pizza and set aside.
    3. On a lightly floured surface, roll the pizza dough into a 12x8 rectangular shape or shape to fit a 12" or larger pizza pan.
    4. Move the dough onto a lightly floured pizza pan or baking sheet and then slide the dough onto the grill. Close the lid of the grill, then allow to cook for approximately two minutes. Open the grill, and with a pair of tongs flip the dough to the other side. Close lid and allow to cook for two more minutes. The dough is cooked when it is browned on both sides. If your grill seems to be cooking the bread too quickly or burning the dough, reduce the heat to medium.
    5. Once dough is cooked, slide the dough onto the baking sheet or pizza pan. Pour the barbeque sauce onto the pizza and spread evenly. Top with the chicken, cheese, onion and bacon. Reduce the grill heat to medium (if you haven't already had to) and slide the pizza onto the grill. Close the lid and allow the pizza to cook for 2-3 more minutes or until cheese has melted. Slide pizza back onto the baking sheet or pizza pan and serve.
