I've totally talked about my summer dog day laziness when it comes to cooking. This is the ultimate lazy day recipe. This grilled citrus kale walnut salad is unique and delicious as a side dish for chicken, beef or any delicious main dish you decide to whip up for dinner. We paired it with this delicious citrus vinaigrette for an extra pop of citrus.
It's a great summer salad that has just enough tang and sweetness to it. You could also make it more of a main dish with some cut up chicken.
Yum, grapefruit and oranges. The perfect citrus combination!
Ingredients
- 1 cup kale, washed and torn
- 3-4 slices grapefruit or oranges
- 2-3 tablespoons feta cheese
- 1 tablespoon walnuts, chopped
- ⅔ cup vinegar
- ⅓ cup orange juice
- 2 tbsp olive oil
- 1 tbsp dijon mustard
- 2 tsp garlic, minced
- 1 tbsp honey
Instructions
- Arrange the kale on a salad plate. Grill the citrus fruit, then remove the rind after cooking with a knife and cut into bite sized pieces. Sprinkle feta cheese and walnuts over the top.
- To make the vinaigrette: In a blender place the vinegar, orange juice, olive oil, dijon mustard, garlic and honey. Blend for up to thirty seconds in the blender until smooth. Drizzle dressing over the salad.
Notes
To make this a meal cut up a cooked chicken breast and place on top of the salad.
