Did you know that you can actually make your own homemade marshmallow creme? I might still be considered "young" by our more mature generation and "old" by the younger generation, but let me tell you--it's never too late to learn something new.
It's a great substitute for all those jars of sticky creme you buy. It's simple to make and easy to eat.
We piped ours onto s'mores.

Not yet though. Today it's raining, and cold rain is definetely not s'more weather. At least outdoor s'more weather.
Store your homemade marshmallow creme in a jar or make some gourmet fancy schmancy s'mores. You can also make these grain free mallomars.
Ingredients
- 2 cups maple syrup or honey
- Pinch of salt
- 3 tbsp unflavored gelatin
- ½ cup warm water
- Graham Crackers--can use grain free, regular, or gluten free
- Chocolate bars or melted chocolate chips--we used Enjoy Life dairy free
Instructions
- In a saucepan, pour maple syrup or honey and salt. Set heat to medium/medium high and allow honey or syrup to reach 240 degrees. Stir to prevent mixture from burning.
- A few minutes after you begin to heat the syrup or honey, place the warm water in your mixer bowl of your stand mixer. Sprinkle the gelatin over the top and allow the gelatin to bloom.
- Once the honey or syrup has reached 240 degrees, remove from heat and turn mixer to medium speed. Slowly begin to pour in the honey or syrup. Once all the syrup or honey has been poured into the mixture, turn mixer to high and stir for 7-8 minutes for marshmallow creme or 9-10 minutes for marshallow fluff. (The longer the mixing time, the more the marshmallow will set. I found 9-10 minutes makes a more marshmallow like texture--I use this time for s'mores, mallomars, etc. the shorter time for recipes calling for marshmallow creme).
- Store in a mason jar for up to one week.
- Pipe marshmallow mixture onto the top of one graham cracker. Place a chocolate bar on top. Top with extra graham cracker. Wrap in tin foil and place in oven,inside grill, or in campfire until chocolate is melted. Eat warm.
- For the gourmet version, pipe marshmallow mixture onto a graham cracker. Use a cooking torch or place graham crackers on a baking sheet and place under the broiler of the oven for 1-2 minutes until marshmallow creme becomes browned.
- Remove from oven and drizzle melted chocolate on top.
