What a President's Day Weekend! My house was overrun with teenage boys and sleepovers. Trying to entertain and feed them all was lot's of fun too. To keep me fueled I made sure that I had a loaf of this high protein cinnamon roll quick bread on hand to eat.
In all honesty the boys were amazing! I let them take over the downstairs studio area were they had a TV, a couch, their own bathroom and they could lay out their beds. They had a blast setting up their video games down there and spending lot's of time hanging out away from us GIRLS.
On Saturday we went out and went sledding. I do not really enjoy winter sports but I did have fun. The boys found this incredibly steep hill hidden aways away and my boyfriend stood at the base of the hill to take videos for them as they came down. it was one of those hills that they come down off of and they are holding their gut and back and "ow!"ing while exclaiming "that was AWESOME!!" at the same time. The first question they would ask when they were okay again was "how much air did i get?" and "can i see the video?"
Sunday night my youngest got to have her first sleepover. The next morning we braved a snowstorm to hit the trampoline park.
That was not fun. The wind and snow. the trampoline park was a blast.
HIGH PROTEIN CINNAMON SWIRL QUICK BREAD
1 ¾ cups unbleached all purpose flour (can substitute gluten free, paleo, keto flour)
¼ cup protein powder
1-½ cups sugar, divided (we used ½ Swerve and ½ sugar. You can use coconut sugar or Swerve or regular sugar)
1 teaspoon baking soda
½ teaspoon salt
1 cup milk (can substitute dairy free)
1 large egg
¼ cup greek yogurt
2 tbsp butter, melted (can substitute dairy free)
3 tsp ground cinnamon
GLAZE:
¼ cup powdered sugar (can substitute)
1-2 tsp milk (dairy free substitutions okay)
DIRECTIONS:
- Preheat oven to 350°. Lightly grease a 9x5 inch loaf pan, then set aside. In a large mixing bowl, stir together flour, 1 cup sugar, baking soda and salt. Stir milk, greek yogurt, butter and egg into the dry ingredients just until moistened. In a small bowl, combine cinnamon and remaining sugar.
- Pour half the batter into the pan. Sprinkle half the cinnamon-sugar mixture evenly over the loaf. Pour and spread the remaining batter into the pan then sprinkle with remaining cinnamon sugar mixture. Take a butter knife and make swirls through the batter.
- Bake loaf for 45-50 minutes or until a toothpick inserted in center comes out clean. Remove loaf from oven, the cool loaf in pan for approximately 10 minutes before removing from pan to a wire rack to finish cooling completely.
- In a small bowl, stir powdered sugar and milk together until desired consistency is reached then drizzle mixture over loaf.
