Coming up with fun and original meals for the family can be tough. Making sure they are healthy too can be a bit of a challenge. Add to that I have to eat gluten free while the rest of the family enjoys gluten filled chicken fingers can also make it a challenge.
One of our favorite meals are homemade breaded chicken fingers. I use gluten free bread crumbs for me, and regular bread crumbs for the kids. The recipe is simple and easy. Just cut chicken breasts into strips, dip the cut chicken breasts in egg and then roll the chicken in the breadcrumbs. Bake at 350 degrees for 20-30 minutes, flipping halfway through and you've got a simple and easy meal. Add a vegetable like salad and dinner is quick and easy. I'll even freeze some of the chicken fingers for later.
Since no one can ever quite decide what mood they are in, I place a bunch of different sauces out on the table and let everyone choose their own. This time, I put out San J Organic Gluten Free Orange Sauce. It had a wonderful orange flavor with a hint of vinegary zip to it. It had a wonderful taste and everyone loved the change from the norm.
