Delicious honey garlic meatballs and rice are the perfect appetizer for the game, or a quick and easy dinner ready in under 20 minutes!
Ugh. I know I've talked about how I've managed to kill just about every appliance in the house. And how my husband sets aside money every month to pay for whatever appliance I may be touching that breaks. Today's news? The stove. I really think I've just cooked too much on it that the poor thing gave out. There is a large crack going down the top of the stovetop. The broiler element isn't working and after several attempts at fixing it we found it won't be fixed without putting a few hundred dollars of work into it. Which means that I am down to two small burners on the stove I can use, and half an oven because nothing cooks evenly anymore.
Yup. We crockpot. A lot. Good thing I have three of them. I can stick a side dish in one, my main dish in another and dessert in the other.
Today's recipe comes from the amazingly talented Colie of Colie's Kitchen. We are members of the Secret Recipe Club. Each month we surprise a member of our group by highlighting one of their recipes. Today it's my turn to highlight Colie. I love her recipes and I love the fact that we share the same philosophy on cooking and cleaning around the house. As in, why is there not a self cleaning button for your house? And why can't you just snap your fingers like Mary Poppins and the house is clean? And how does more dirty laundry and dishes just magically appear several minutes after you've cleaned them?
While I loved many of Colie's easy recipes that allow me to utilize my slow cooker and my remaining two stovetop burners, these recipes caught my eye for the upcoming holidays:

This meal I chose today makes me happy because I can throw it on the one of two stovetop burners still working and it's done in 20 minutes or less!
Ingredients
- 2 pounds premade meatballs (we made homemade ground turkey meatballs)
- ½ tbsp butter
- 2-4 cloves garlic, minced
- ½ cup honey
- ¾ cup ketchup (we used corn syrup free)
- 3 tbsp low sodium soy sauce
Instructions
- In a medium saucepan, melt the butter over medium heat. Once butter is melted, stir in the garlic and cook for 30 seconds to one minute.
- Add in the honey, ketchup and soy sauce, stirring until mixed and allow mixture to simmer for approximately five minutes.
- Add the meatballs to the sauce and cook for 5-7 minutes, or until meatballs are cooked through.
- Serve on toothpicks as an appetizer or serve meatballs over brown rice for a complete meal.
