March Madness is here and our family gets really excited for it. My son comes running in and asks when his favorite teams will be playing. Today we hit the grocery store for one of our favorite meals--meatball hero subs. They are easy to make and don't require too many ingredients. And they are perfectly messy fun for the kids to eat. Our kids love meatballs in any form--on spaghetti, in sandwiches, or on a bed of brown rice.
We paired these sandwiches with some delicious Kettle! brand kettle barbeque chips. They are my husband's favorite. In fact they are such a favorite of his that he has been known to buy them and hide them from the kids. He's also been known to share a small handful (like 2 chips) when the kids ask. So today, my son anxiously asked if he and his sister could get their own bag because "Dad is not a good sharer." I snuck a bag in for him, and while putting away groceries I noticed the second bag of chips had mysteriously disappeared and was being consumed by him.
Make yourself some meatball hero subs this weekend while enjoying the games. They are a great meal. We also like to make an extra batch and freeze the sauce and meatballs together and heat them up on the stove when we are ready.
To make meatballs:
1 lb ground beef
2 tsp Italian seasoning
¼ cup bread crumbs
Preheat oven to 425 degrees. In a bowl, mix together the meatball ingredients until well blended. (I usually mix them together by hand). Form meat mixture into golf ball sized balls and place on a baking sheet. Bake at 425 degrees for 15-20 minutes until meatballs are no longer pink in the center. Remove from oven, and set aside for later use.
1 can Muir Glen organic four cheese pasta sauce
In a saucepan, heat up ¾ of a 25.5 oz can of Muir Glen organic four cheese pasta sauce at medium heat. Add the meatballs to it and continue heating until sauce becomes bubbly. While sauce is heating up, in an oven set to broil, lightly toast
4 hoagie buns or kaiser rolls
Place the hoagie or kaiser rolls on a baking or cookie sheet and place in the oven insides up. Broil for 1-2 minutes or until lightly browned. Remove rolls from oven and place one bun or roll on each plate.
Spoon meatballs onto hoagie or kaiser rolls and spoon some of the cheese marinara sauce over it. Sprinkle a small amount of parmesan cheese over it, place the other top of the hoagie bun on top and eat. Serve with a side salad, fruit and vegetables, or chips.
