    Monster Eye Tacos

    I absolutely love Halloween and these monster eye tacos are sure to be a hit! I don't enjoy the cold weather, but I love that I can leave the house and go running any time of the day and it will be cool. I also love that some of my favorite foods are in season.

    I couldn't go through the season and NOT share a Halloween themed treat. The other night I surprised the kids with a surprise in their tacos.

    I'll admit it. They loved them, but thought it was a little bit creepy that their food was staring at them. Which made me happy. It was the point to make them feel a little creepy. 🙂

    Monster Eye Tacos

    For the meatballs:

    1 lb lean ground beef, turkey, or chicken

    1 egg

    ¼ cup whole grain bread crumbs

    1 small onion, chopped

    ½ tsp pepper

    2 tbsp taco seasoning

    For the tacos:

    Shredded 1-2% cheddar cheese

    Tomatoes, cut into small cubes

    Sour cream

    Shredded lettuce

    Pitted and sliced olives, for eyes

    In a bowl, mix together all of the ingredients until they are thoroughly incorporated. Form the meat into 1 ½ inch balls. Place meatballs on a lightly greased baking sheet. Cook uncovered in a 425 degree oven for 15-18 minutes or until meatballs are well browned and slightly pink in the center when slashed.

    Assemble tacos, filling each taco shell with cheese, lettuce, tomatoes, sour cream and two meatballs.

    In a sandwich bag, place approximately ¼ cup of sour cream. Snip off corner of bag and pipe several small eyes onto the tops of the meatballs. Place olives (or in our case cranberries or anything else that are not olives 🙂 on top of the sour cream to form eye balls.

    Serve with corn, beans, salad or rice.
