    Multigrain Cinnamon Crunch Breakfast Bites

    Delicious multigrain breakfast bites are a nutritious way of starting off your day right. 

    These are the best pick me up and go breakfast. Place them down in front of the kids and be on your day. They'll love them, you'll love that they love them and everyone is happy. Breakfast time win!

    Except that you can't call them a donut. (Don't call them a donut). They are not a donut.

    They are more of a biscuit like texture--therefore a breakfast bite. With lot's of cinnamon, sugar and added bonus--dipping sauce! (Be grateful the teacher gets them when the sugar kicks in).

    Buuut, you can omit the dipping sauce, use healthier sugar and then the teacher will love you. (Go that route, parent teacher conferences are around the corner. Better to be safe than sorry).

    Multigrain Cinnamon Crunch Breakfast Bites

    Yield: 24 bites

    Serving Size: 4 bites

    Ingredients

      For the Breakfast Bites:
    • 1⅓ cups whole wheat or white whole wheat flour
    • 1 cup multigrain rice krispies cereal, coarsely crushed (can sub regular rice cereal)
    • 2 tbsp sugar
    • 3 tsp baking powder
    • ½ tsp salt
    • ¼ cup butter, softened
    • ½ cup milk (can substitute non dairy milk)
    • For the Cinnamon & Sugar Mixture:
    • 2 tsp cinnamon
    • ⅔ cup sugar (can use coconut sugar)
    • ⅓ cup butter, melted
    • For the Dipping Sauce:
    • 3 ounces softened cream cheese (we use the greek yogurt/cream cheese blend)
    • 2 tbsp butter, softened
    • 1 cup powdered sugar
    • 4-5 tbsp milk

    Instructions

    1. Preheat oven to 400 degrees. Lightly grease a baking sheet and set aside.
    2. In a small bowl mix together the two teaspoons cinnamon and sugar. Set aside. Melt the ⅓ cup of butter in a separate bowl and set aside.
    3. In a mixing bowl stir together the flour, crushed multigrain cereal, sugar, baking powder, and salt.
    4. Mix in the butter and stir until mixture becomes coarse crumbs.
    5. Whisk in the milk just until mixture becomes moistened. (The mixture will be dry).
    6. Shape dough into one inch balls. Dip dough in the melted butter than coat completely in the cinnamon sugar mixture. Place onto the baking sheet, leaving an inch of space between.
    7. Bake at 400 degrees for 15 to 17 minutes. (Note if using cinnamon sugar you will want to check for doneness after 12 minutes). Bites are cooked when they are lightly golden brown on the outside and are not doughy on the inside.
    8. Remove from oven and move bites to a cooling rack to cool while you make the dipping sauce.
    9. To Make the Dipping Sauce:
    10. Combine the cream cheese, butter, powdered sugar and milk in a bowl until a smooth, frosting like consistency forms. Pour into individual sized bowls and serve with bites.

    Notes

    The bites can be made ahead of time and then frozen until ready to serve. Freeze in an airtight container or Ziploc freezer container. To serve: thaw at room temperature for an hour, or microwave for 20-30 seconds until thawed and warm. Serve with dipping sauce as directed above.
