    Peaches and Cream Overnight Oats

    A delicious peaches and cream recipe that is great for you! A perfect summer time recipe for oatmeal that combines the rich flavors of ripe peaches, cinnamon, yogurt and oatmeal. A great overnight oats recipe!

    The one question that seems to pop up  a lot this year is "I have SO many of _____ growing in my garden! What do I do with it all?"

    If you have too many peaches, you opt for this peaches and cream recipe. It's delicious! This time of year peaches are plentiful and oatmeal is not a meal that you would think of to make when the weather is over ninety degrees. If you're like me, you've probably also got an abundance of oats left over from those early cold spring days. Pull them out and make up this fabulous recipe for oatmeal! The great thing about this recipe is it is sweet enough to enjoy a bowl for dessert or as a rich and sweet breakfast.

    You can make it up the night before in less than ten minutes and stick it in the fridge. It's the easiest bowl of dinner (or dessert) you will enjoy!

    Peaches and Cream Overnight Oats

    Ingredients

    • 1 cup peaches, diced into bite sized pieces
    • ¼ cup water
    • ½-1 tbsp coconut or brown sugar
    • ⅓ cup rolling oats
    • ⅔ cup milk
    • ¼ tsp cinnamon + dash for topping
    • Vanilla greek yogurt
    • Chopped pecans or walnuts

    Instructions

    1. In a saucepan, place the peaches, water and sugar. Bring the mixture to boiling, then reduce the heat to a simmer, stirring frequently for several more minutes until the mixture begins to thicken. Remove from heat and allow to cool.
    2. In an airtight container, place the oats, milk and ¼ tsp cinnamon. Stir to combine. Place the lid on the container and place in refrigerator.
    3. In a separate airtight container, place the peach mixture. Place the lid on the container and then place the container in the refrigerator.
    4. Store in the refrigerator for eight hours or overnight.
    5. To serve: Remove the oats and peaches from the refrigerator. Pour the peaches onto the oats and top with a dollop of vanilla yogurt. Garnish with a dash of cinnamon and nuts if desired.
