    Pomegranate Orange Salsa

    There is one combination that just screams winter to me. Pomegranates and oranges. Mix the two together, and the flavor is just perfect. I was looking for something sweet, but spicy too. On my counter sat a box of clementine oranges. A pomegranate was sitting next to the clementines. And it was lunchtime and I was starving. I find that now that I'm pregnant, I either don't want to look at food, or I'm starving. Nothing in the middle.

    This is the perfect snack for those days you are craving something different. It's easy to make and store and just tastes incredible together!

    If you aren't wanting to scoop out your own pomegranates, many stores actually sell just the arils (seeds) of the pomegranates in containers. They are pricier, but it will save you lot's of time!

    POMEGRANATE ORANGE SALSA

    1 cup pomegranate arils

    3 clementine oranges (or 2 regular sized oranges), peeled and cut into small pieces

    ½ yellow onion, diced finely

    Juice of 1 lime

    2 tbsp finely chopped cilantro

    1-2 jalapeno peppers, diced very finely (Use 1 jalapeno for milder salsa, and 2 for a spicier salsa)

    2 tbsp oil

    Salt and pepper, to taste

    In a mixing bowl, mix together the pomegranate arils, oranges, cilantro, onion, jalapenos, oil and salt and pepper until well mixed. Place in an airtight container until ready to serve. Suggested serving snacks: Stacy's plain pita chips, tortilla chips or wheat crackers.

      Gorgeous! Gorgeous! Your salsa looks delicious and so refreshing. I'm always looking for ways to use pomegranate seeds.
