Protein waffles are the perfect post holiday recipe for getting you back on track but still letting you enjoy something sweet!
Easter with teenagers is an interesting thing. In some ways it's sad, and in other ways I love it. They didn't really want to dye Easter eggs but I'm truly okay with that. I'm the only one in the family that eats hard boiled eggs so it saves my waistline. But my youngest wanted to, so we dyed Easter eggs.
And the oldest kids didn't want to do Easter egg hunts. I am OKAY with that! I am not really into Easter hunts and all the crowds and things.
But this year I tried something different...a dog Easter egg hunt.
Okay THAT was fun. My six year old and I decided to try one out. Before we went she went to our local craft store and made this cute Easter headband.
After our craft we left for home and made one last ditch effort to try to pry the teenagers out of the house for our dog easter egg hunt. But they wanted to stay at home and continue their spring break Netflix binge.
They missed out on this cuteness.
And a fun dog Easter egg hunt.
It was a great time relaxing this weekend. This morning the kids woke up to their Easter baskets and then went off to their Dad's for a busy day today. They were exhausted when they got home. Some of my most precious moments with the kids are those moments they get back from their Dad's and they talk about their day and everything that happened.
Tonight my son relayed how he ate 3.5 cinnamon rolls, lunch, dinner at their aunt and uncles and then came home and ate a giant Reese's egg my boyfriend left for him. And finished the night off with beef jerky. There are days that i really miss being a teen with a fast metabolism and holiday day's are one of them.
But it is time to get back on track and back to eating healthy because my metabolism and I are not as good of friends as we used to be in my teen years.
These protein waffles are perfect on those days that I'm not quite ready to give up the holidays but need to get back on track. Pair these with some berries and it's a healthy win win.
Ingredients
- 1 cup flour (can substitute gluten free if needed)
- 1 banana
- 2 eggs
- ½ cup egg whites
- 4 tsp baking powder
- ¼ tsp salt
- ½ tsp cinnamon
- 1-2 scoops protein powder
- ½-3/4 cup milk (can use dairy free alternatives)
Instructions
- In a blender, mix all ingredients until smooth.
- Heat waffle maker according to manufacturers directions.
- Add batter to waffle maker and cook according to manufacturers directions.
- Top waffle with berries, etc. if desired.
