I love digging my spoon into one of these amazing parfaits. They are rich and creamy and filled with high protein greek yogurt. A touch of pumpkin puree, some spices and a touch of maple syrup make this one delightful breakfast.
It takes just a few minutes to prepare and can be made easily with our microwave granola recipe.

Pumpkin Pie Greek Yogurt Parfait
- 8 oz nonfat plain greek yogurt
- 2-3 tbsp pumpkin puree
- ½-1 tsp cinnamon or pumpkin pie spice
- 3 tsp maple syrup*
- *In a pinch you can substitute the maple syrup for coconut sugar or several drops of stevia
- In a bowl, stir together the yogurt, pumpkin puree, spice and maple syrup. Stir until smooth.
- Top with granola.
