    Pumpkin Spice M&M Cookies

    Here's a new pumpkin recipe: A lightened up cookie recipe filled with pumpkin spice and great tasting seasonal Pumpkin Spice M&M's.

    It couldn't be a week full of pumpkin without a cookie recipe. I've seen recipes for Pumpkin Spice M&M's all over the internet and just had to try them. For all the times that I have tried to make healthier recipes I will tell you that M&M's are probably my favorite candy. I only like the chocolate ones though. Just plain old chocolate.

    When I saw the Pumpkin Spice M&M's in Target I was hungry. And when I'm hungry it is very, VERY easy to give into my cravings. I bought a bag and on the way home contemplated all of the recipes I could make with it. These M&M's are delicious with a hint of spice to them, but not overpowering.

    Of course cookie recipes came to mind.

    Pumpkin Spice M&M Cookies

    Ingredients

    • 1 ¼ cups unbleached all purpose flour
    • ¼ tsp baking soda
    • 1 tsp cinnamon
    • ¼ tsp ginger
    • ¼ tsp nutmeg
    • ⅛ tsp cloves
    • ¼ tsp salt
    • 5 tbsp butter
    • ½ cup cocoa
    • ⅔ cup granulated sugar (can substitute coconut sugar)
    • ⅓ cup packed brown sugar
    • ⅓ cup plain greek yogurt
    • 1 tsp pure vanilla extract
    • ½ cup pureed pumpkin
    • 1 cup coarsely chopped Pumpkin Spice M&M's
    • Whole Pumpkin Spice M&M's for decorating

    Instructions

    1. Preheat oven to 350 degrees. Lightly grease a cookie sheet then set aside.
    2. In a bowl, place the flour, baking soda, salt and spices. Stir until combined.
    3. In a small saucepan on the stove or in the microwave melt the butter. Remove from heat (or the microwave) and immediately stir in the cocoa and sugars. The mixture will be thick and coarse. Add in the yogurt and the vanilla extract, stirring until combined.
    4. Add the wet ingredients to the dry ingredients and stir until mixture is smooth. Fold in the M&M's.
    5. Drop dough by tablespoons onto a cookie sheet, leaving two inches of space in between cookies. Press one to several M&M's onto the top of the cookie.
    6. Bake at 350 degrees for ten minutes or until cookies are set on the outside.
    7. Remove from heat and allow cookies to sit on cookie sheet for several minutes before moving to cooling rack to finish cooling completely.
    8. Store cooled cookies in an airtight container in the fridge, or place in a Ziploc freezer bag and store in the freezer for several weeks.
