    Pumpkin Spice Overnight Oatmeal

    Pumpkin spice overnight oatmeal is a delicious and easy way to make a breakfast fall favorite.  

    I love the fall season. But the other day, our house had a #burnt moment. Yup, but this time I'm glad it wasn't my fault.

    I put one batch of pumpkin chocolate chip muffins in to cook and they cooked perfect. I put the second batch in, set the timer and within 20 minutes the fire alarm was going off and the house was filled with smoke. The muffins had burned to charcoal all the way through. I saw that the oven said "F1" and "err" and quickly turned it off. Windows went flying open, the muffins were rushed outside to the trash and the exhaust fan went on. An hour later, the oven started beeping. The handle of the oven was hot to the touch and I found the oven had never turned off! I grabbed some oven mitts and shimmied the oven out of it's resting spot and unplugged the oven from the wall.

    And now I'm oven less for a few days while they repair the oven. It's killing me with it being cooking season. But I'm surviving barely.

    Breakfast has been on the go lately so this overnight oatmeal is easy to prep while I make school lunches for the next morning. I just toss it into the fridge with the lunches and pull it out and heat it up in the microwave in the morning. And the bonus is I get to have my pumpkin spice fix until the oven gets fixed.

    Try this simple and easy pumpkin spice overnight oatmeal recipe. You WON'T be disappointed! It's delicious!

    Pumpkin Spice Overnight Oatmeal

    Yield: 1 serving

    Ingredients

    • ⅓ cup pumpkin
    • ½ cup rolled oats
    • ¾ cup milk, almond milk or coconut milk
    • 2 tablespoon yogurt (dairy free okay)
    • Pinch of pumpkin spice
    • Pinch of cinnamon
    • Pinch of salt
    • ½ teaspoon vanilla
    • Optional Toppings:
    • Maple Syrup
    • Pecans or walnuts
    • Chia Seeds
    • Cream

    Instructions

    1. Place the pumpkin into a bowl. Stir in the oats, milk, yogurt, spices and vanilla.
    2. Cover and place in the refrigerator overnight.
    3. In the morning, place the oatmeal in a saucepan or in a microwave safe dish. Heat on medium heat on the stovetop until warm or in the microwave for 60-90 seconds.
    4. Serve with desired toppings.
