Quick Applesauce for One

There are times in parenthood when one minute seems like an eternity. Like when your child performs her first solo, and you realize that you've been holding your breath the entire time she's been playing. Or when your little boy runs out into the middle of the road, and you see a car turn the corner in their direction. Or when you watch her take that first fall on her bike.

Any parent will also tell you that food can also make a minute seem like forever. Have you ever tried to prep lunch for a two year old? They are so good to allow their parents five minutes to prep a quick lunch. They sit quietly waiting for you, coloring or playing cars, oblivious to the fact that their stomach is rumbling.

If you have EVER have had a two year old, you know that I am absolutely without a shadow of a doubt, LYING!

No, they cling to your legs screaming "Ungreee!! Eeeeeeaaaat!!" You try to navigate to the fridge to pull out their chicken nuggets and pop them in the microwave before you have to navigate back to the fridge to pull out their applesauce. Because now they've moved from your leg into your arms and are flailing their bodies in erratic movements in an attempt to knock over or grab anything that they can.

Of course, when you're me you find that the applesauce is gone. GONE!!

Thanks to Secret Recipe Club, I get to surprise Dorothy of Shockingly Delicious by highlighting her recipe for Applesauce for One.  She saved the day by providing a quick and easy applesauce recipe that my two year old loved. It's all natural and has no sugar added.

You can head over to her site to find more great recipes, but I highly suggest taping this recipe to the inside of your fridge where the applesauce is usually stored. Just in case.

I also enjoy this recipe on top of my morning oatmeal, when you need applesauce in a recipe, on top your pork chop, as a side dish, or as a quick and easy food for baby to eat.

Quick Applesauce for One

Prep Time: 3 minutes

Cook Time: 2 minutes

Total Time: 5 minutes

Yield: 3 tablespoons

A simple applesauce recipe for topping oatmeal, as a side dish or on top a pork steak.

Ingredients

  • 1 apple (Fuji recommended, but any will work)
  • ¼ tsp ground cinnamon

Instructions

  1. Peel, core, then quarter the apple. Slice the apples thinly and place into a microwave safe dish.
  2. Sprinkle the cinnamon evenly on top of the apples.
  3. Microwave apple for 2 ½ minutes on high. Remove dish from microwave.
  4. With the back of a fork, mash the apples with a fork until coarse,

Notes

Cooking times may vary due to microwave oven wattage. You can also place the applesauce in a blender or food processor to mash.

    I have a little one on the way, and this is something I will definitely tuck away for future use (or just for me - I love applesauce, and homemade is always so much better!) Great SRC pick!!
