What is Reverse Steak?
Basically, reverse steak allows you to not have to rest the meat after cooking. By resting the meat, or allowing it to sit for a few minutes after cooking, it allows the juices to seep back into the meat, making it super tender. With a reverse steak cooking method, you are baking the meat, then pan frying it the remaining time. The juices stay inside the steak and tenderize the meat making for a delicious and tender juicy steak!
Seasoning Steak
You can season your steak however you like. Popular methods might include:
- Salt and pepper
- Garlic powder
- Barbeque seasoning
- Rubs
Cooking Instructions
First you'll bake the steak in the oven until it reaches about 10-15 degrees cooler than your desired cooking temperature. Then you'll take the meat out and pan fry until they reach your desired temperature.
Cooking Temperatures
Your steaks are ready to eat when they reach this temperature:
- Medium Rare: 135 degrees
- Medium: 145 degrees
- Well Done: 160 degrees

Reverse Steak
Ingredients
- 4 steaks see notes for recommended steak cuts
- salt and pepper, to taste
Instructions
- Remove your steaks from the refrigerator and allow to come to room temperature (approximately 15-20 minutes)
- Preheat oven to 250 degrees. Arrange steaks on a wire rack over rimmed baking sheet. Bake at 250 degrees until steak reaches 10-15 degrees below your desired finished cooking temperature. (For example, if you want well done steaks which are finished cooking at 160 degrees, you will remove steaks from the oven at 150 degrees). Remove from oven.
- Heat skillet to high heat. for a cast iron skillet, heat one tablespoon of oil in pan so steaks will not stick to the pan. Place steaks from the oven to the pan. Brown on both sides until steak reaches desired finished temperature. Remove from heat and serve.
