When I first saw this recipe at Rookie Cook, I thought NO WAY DID SHE ADD THAT to her chocolate chip cookies. There was no way that she could add an ingredient like that and not get people to taste it. Challenge accepted. The Easter M&M cookie I made a couple of years ago was going to get a serious makeover this year.
And I have to admit even though I love to win, she won this time.
I even let thirty other people sample them and nobody could taste that I had slid a secret ingredient in.
What is the secret ingredient you ask? White beans.
Don't gag. I don't like them either. That's why I throw them into anything I bake, namely sweets.
You can't taste them. You can't smell them. I LOVE these cookies!
Ingredients
- 1 cup packed brown or coconut sugar
- ½ cup white sugar (substitutes okay)
- ½ cup coconut oil or softened butter
- ½ cup mashed white beans (I put mine in a food processor and made them into a puree)
- 2 eggs
- 2 teaspoons pure vanilla extract
- 2 ½ cups + 2-3 tbsp unbleached all-purpose flour
- 1 tsp baking soda
- 1 tsp sea salt
- 1 ½ cups M&M's or Sunspire chocolate coated candies
Instructions
- In a mixing bowl with a mixer set to low, blend together the sugars, coconut oil or butter and white beans until smooth and all coconut oil chunks are broken up. Add in the eggs and vanilla and continue blending until smooth. Add in the flour, baking soda and salt and continue to blend until smooth. Fold in the M&M's.
- Refrigerate dough for 30 minutes prior to baking. Note: If you are worried about the M&M colors bleeding, you can wait and fold in the M&M's prior to baking.
- Drop cookie dough by rounded tablespoons several inches apart on your cookie sheet. Bake at 350 degrees for 9-11 minutes or until lightly browned around the edges. Remove from oven and allow cookies to cool for several minutes on the cookie sheet before moving to a cooling rack to finish cooling completely.
My children love cookies! It would be interesting to see if they noticed the secret ingredient!
