    Sheet Pan Dinner + Vacuvita Saves My LIFE!

    Sheet pan dinner's have saved the day when making dinner on busy nights along with the Vacuvita® sharing my joy by helping me save money when I head to the store and stock up. Confused? Read on!

    Easter is over and now it's time to work off the holiday pounds in anticipation of summer right around the corner. Which means that the gym is going to be packed again for awhile with everyone sharing my philosophy on exercise.

    Lately the kids and I have been Netflixing old episodes of The Office and Kevin and I must be kindred spirits when it comes to eating because the other day when they talked about planning a holiday party, this quote made me laugh.

    Is anyone else like me? I love looking at the ads every week for good deals on fruits and veggies. And depending on what's on sale is usually what I will eat that week. Sometimes (okay a LOT of times) I go overboard a little and buy more than I actually need. And then there is the problem of what to do with it all. I've found that a lot of times when you buy fruits and vegetables that are on sale, they don't last as long.

    I've found a great way to use up the vegetables is sheet pan dinners. They are easy and simple and delicious.

    Another great way to preserve some of those fruits and vegetables is by using a vacauum sealer like  Vacuvita® One Touch Storage System.

    Before Easter, I preserved some asparagus. Asparagus was on sale but I knew that I wouldn't eat it all by Easter. I bought WAY too much since I'm the only one that eats it in the family. So it was nice that I could plug it in, seal it and keep it for this dinner tonight.

    And then I used it to make this sheet pan dinner. The ease and simplicity of my life now. I was so excited about how simple my life has become that I even got a nap in today.

    And when I woke up this fort greeted me. And I then I felt guilty for napping because my living room looked like my daughter moved her bedroom into the living room. I seriously am amazed sometimes with what she can do in 30 minutes. And even more amazed that when I tell her she needs to clean up she can't do it. *Sigh* Mom life.

    So resorting to these sheet pan dinners are as simple as throwing a few vegetables and a meat on a cookie sheet and throwing it in the oven. And now you can preserve your vegetables long enough to use them in this great sheet pan dinner with Vacuvita®

    Sheet Pan Dinner

    Yield: 4 servings

    Serving Size: 1 serving

    Ingredients

    • 1 package sausage, 4 chicken breasts, or leftover ham
    • 4 red potatoes, washed and diced
    • 1 cup baby carrots
    • 4 tbsp olive oil, divided
    • 1 tsp paprika
    • ½ tsp garlic powder
    • 1 tbsp dried oregano
    • 1 tbsp dried parsley
    • ¼ tsp salt
    • ¼ tsp pepper
    • 2 ears corn, cut in half
    • 1 cup broccoli florets
    • ½ bunch asparagus
    • parmesan cheese (optional)
    • **Note** If using chicken breasts, use 8 tbsp oil (divided), 2 tsp paprika, 1 tsp garlic powder, 2 tbsp oregano, 2 tbsp dried parsley, ½ tsp salt, and ½ tsp pepper.

    Instructions

    1. Preheat oven to 400 degrees. Line a cookie sheet with aluminum foil, then oil or spray the aluminum foil.
    2. Place the potatoes and carrots on the cookie sheet. (If using chicken, you will also want to place the chicken on the cookie sheet). Drizzle and toss with two tablespoons of olive oil if using just vegetables or four tablespoons if using chicken breasts. Cook at 400 degrees for 20 minutes.
    3. Remove sheet from oven and add the corn, broccoli and asparagus and sausage if using.
    4. In a separate bowl, mix together the remaining oil and spices, stirring until combined. Drizzle over the top of the vegetables and chicken (if using), then toss to coat evenly.
    5. Return the sheet to the oven and bake for an additional 20 minutes, or until potatoes and vegetables are cooked evenly. (If cooking chicken, make sure the chicken is no longer pink in the center).
    6. If you are using ham, toss the ham with the vegetables and cook the last ten minutes of baking time.
    7. Remove from oven, sprinkle with parmesan cheese if desired then serve.

    Notes

    You can use the Vacuvita to store and freeze individual servings for lunches! Just unseal and heat for a minute to two minutes until thawed and eat!
