Single serving macaroni and cheese is oozing with cheesy goodness and a crisp, buttery crust.
You know that for our family we are always on the go! Lately if I can get dinner on the table I count that as a minor miracle. Miracles happen when dinner is on the table before 7. We try to all sit down together to have dinner but at least one or two nights a week the kids are visiting with their Dad or activities happening around dinnertime make it impossible.
So we do our best. The other night I knew that dinner was going to be staggered. One kid would be trickling in from activities every half an hour or so and they would be coming in hungry. I used the opportunity to park myself in the kitchen and make freezer meals. I threw one of these in the oven every thirty minutes so it would be ready when one of the kids walked through the door. My plan worked perfect. Each kid was greeted to a hot meal when they walked through the door.
I have to thank Laura from Mother Would Know for the recipe. She is the mastermind behind the recipe. I am highlighting her today as a member of the Secret Recipe Club. In addition to this great meal, she also had these amazing quick and easy meals for all you other busy men and women out there.

Ingredients
- ½ cup elbow macaroni (can substitute gluten free pasta if needed)
- ⅔ cup grated sharp cheddar or other hard cheese + 2 additional tbsp for topping
- 1 large egg, lightly beaten
- 1 cup milk
- 2 tbsp melted butter
- Dash of Worcestershire sauce
- ¼ cup bread crumbs – plain store-bought, panko, homemade or gluten free
- Salt and pepper, to taste
Instructions
- Preheat oven to 350 degrees. Lightly grease two ramekins.
- Place the macaroni in the ramekins. Divide the cheese evenly among the ramekins by sprinkling the cheese on top.
- Warm the milk by microwaving on high for one minute. Crack the egg into a bowl and begin to stir in the milk, whisking to combine. Whisk in the melted butter, worcestershire sauce, and salt and pepper until blended. Pour half of the milk mixture into one ramekin, the other half into the other ramekin.
- Allow macaroni to sit at room temperature for ten minutes before placing in oven. Stir the remaining two tablespoons of cheese together with the bread crumbs. Sprinkle half of the bread crumbs over each ramekin. Dot with a little bit of butter if needed. Place ramekins on cookie sheet before moving to oven as some of the mixture may spill over while cooking.
- Bake macaroni at 350 degrees for 30-35 minutes, or until sauce is bubbling. Remove macaroni and cheese from oven and allow to cool for several minutes before serving.

I love mac and cheese and this reminds me of a dish I used to make a lot. Although I didn't finish it off in the oven, I used a microwave, to cook the egg and melt the cheese.
