    Slow Cooker Creamy Ham and Potato Soup

    Slow cooker creamy ham and potato soup is the perfect winter comfort meal. 

    It's soup time. I love using my slow cooker in the wintertime because of the ease and convienence.

    The other day I was cleaning out the freezer. I think that might be the second worse job next to cleaning bathrooms. Although I just had to clean out the dryer vent and I might add that to the list above the freezer.

    I always cringe when I clean out the freezer. even though my intentions are good and I think when I place something in the freezer that I will use it again, it somehow gets stuck in the back of the freezer and I forget about it.

    But this soup is just amazing and you will want it as leftovers the next day. I made a dairy free version for me and the kids got this version and loved it. they had it the next night too for dinner.

    We served it with some crusty french bread and it became the perfect winter comfort meal. It's been the wierdest weather week with freezing rain, record cold and record snow. I'm so over winter.

    Slow Cooker Creamy Ham and Potato Soup

    Ingredients

    • 8 cups russet potatoes, thinly diced
    • 1 yellow onion, diced
    • 2 large carrots, peeled and finely chopped (we used about 1 cup frozen carrots)
    • ½ cup frozen peas
    • 2 cups cubed ham
    • 1 teaspoon salt
    • ½ teaspoon pepper
    • ¼ cup flour (can use cornstarch or arrowroot for gluten free)
    • 4 cups chicken broth
    • 1½ cups heavy cream (milk can be substituted--I used almond milk and it worked fine)
    • ¼ cup flour
    • ½ cup sour cream (omit if dairy free)

    Instructions

    1. Place potatoes, onion, carrot, peas, ham, salt, pepper and chicken broth to your slow cooker and cook on low 7-8 hours, or high 4-5 hours.
    2. With a potato masher, mash approximately ⅓ of the potatoes.
    3. Add in the cream or milk, flour, and sour cream. Cook an additional 15 minutes then serve.

      I'm the same way with my freezer...thankfully I clean it out every month or so or it would get really icky trying to decide what was what. Nothing every looks anything like it did when it went in!

      I really need to clean my freezer, too. I usually keep a list of everything that is in there - mark it off when I take it out, add to the list when I put something in, etc. - but somewhere along the line I let the list go, and now I have no idea what is in there.

      This sound so yummy! I have the same issues with my freezer! I have the best intentions. I wish there was some way to to set up a pop up reminder! There probably is.... I pretty much have the same issue with my veggie drawer and pantry =)
