Slow cooker lasagna soup pairs perfectly with a nice slice of cheesy garlic french bread.
This time of year the slow cooker gets a workout. I'm also big into salads and make a lot of the during the summer. The heat of the summer is absolutely draining and I don't like turning on the stove or oven during the summer.
While slow cooker meals don't always sound the best when the heat of the summer is on, it's a great way to make a meal in a short amount of time. The meals are relatively easy to prep, often taking only minutes to throw into the slow cooker.
It's easy to hit the on switch and then let dinner cook the rest of the day then come home from the pool, work or a hike and have dinner waiting.
Summers are a busy time. It seems like they will be idyllic and slow but often summers can send a normal schedule off. A late afternoon swim makes getting home and prepping something difficult when tired, hungry and cranky kids are ready to eat.
Our summer has been pretty slow so far and we are ready for me to finish my summer teaching and go on vacation! That ends this week and then it's off for a couple of weeks of much needed down time.
Personally it's been a more difficult time for me. The dust has settled, but unfortunately there are bandaids left from the trip. At times ripping off those bandaids have seemed more difficult to do than that initial time you were finding your way through the dust storm and earning those bandaids.
I remember as a kid I would leave those bandaids on FOREVER in hopes they would one day just fall off on their own so I wouldn't have to feel the pain. But as I've gotten older I've learned ways to adapt and allow myself to feel the pain and realize that that initial sting of the bandaid coming off can hurt, but the pain does go away. But you can't be afraid to do it.
It's been so difficult to voice what I want and need going forward, break my heart again, find happiness again, and have stress and worry like I've never experienced. But the other side, though hard is becoming brighter.

Ingredients
- 1 lb ground beef
- 3 cups beef broth
- 4-5 cloves of minced garlic
- 1 tbsp dried parsley
- 1 tbsp dried basil
- ½ cup chopped onion
- 1 28 oz can of diced tomatoes
- 1 6oz can of tomato paste
- 1 cup vegetable juice
- ¼ tsp pepper
- ¼ tsp salt
- 2 cups uncooked shell pasta
- 1 cup of water
- Shredded mozzarella or parmesan for topping
Instructions
- Add in all ingredients to the slow cooker minus the noodles and one cup of water. Stir ingredients to combine.
- Cook on low heat for 7-8 hours or high for 4-5 hours. The last thirty minutes of cook time add the 1 cup of water and noodles.
- To serve, spoon soup into bowls and top with shredded cheese if desired.
