    St Patricks Day Rainbow Cake For One +Trampoline Troubles

    Happy St. Patrick's Day! We really didn't do a whole lot this year. Usually our leprechaun leaves us some very nice cereal and gold coins for breakfast but unfortunately this year the leprechaun cleared all the shelves at the grocery store and forgot to leave anything for anyone.

    But we did make a rainbow cake. This St. Patrick's Day rainbow cake for one was for me (I made a big one for the kids and the boyfriend). the cake was absolutely delicious! I am a frosting girl and I thought the cake would've been so good without it too.

    Today is best boyfriend ever day. The kids and I decided to spend our Sunday putting up the trampoline. We were so excited when the directions read it would take two adults about two hours or less to put it together. Less than two hours was deemed "superhero" status.

    4 hours and 7 minutes later two adults, two teenagers and two children got the trampoline put together.

    The first time the two teenagers started to assemble it and then we found an error. So we broke the process apart and started over.

    The second time the two adults messed up the trampoline and had to tear apart the trampoline again in order to get the mat aligned right.

    The third time...well, the third time was the manufacturers fault when we found an error in how they put the enclosure on.

    Finally 4 hours and 7 minutes and four tries later we had the trampoline assembled. And we were starving and glad that dinner was ready.

    My boyfriend has decided that he will not be getting near the trampoline for awhile. But we are glad that he was able to come for dinner tonight to help us because it would not have gotten done. I don't think I would've figured out the manufacturer flaw. i couldn't even take a picture of the completed look because it was almost dark by the time we got it up.

    The funniest part of the night was when our german shorthair pointer jumped up on the trampoline and then couldn't get off. she kept sliding around the trampoline. She hasn't gotten her trampoline legs yet.

    My boyfriend sent me this about her one morning. It's so true because the next morning this happened:

    So because I wasn't given the opportunity of napping in my own bed, I decided that it was time for some cake. So I could eat it in front of her and make her miserable while I ate it in front of her. She replied by counter cruising and finding some bacon. Love this dog child. It's a constant battle.

    This beautiful rainbow cake for one is perfect for Saint Patrick's Day or birthday parties. We used a 4x4 inch ramekin to make our cake, then piped some beautiful frosting clouds on top. I think it would've looked cute adorned with some gold coins too but the leprechaun stole them from the grocery store.

    RAINBOW CAKE FOR ONE

    FOR THE CAKE:

    3 tbsp butter, softened

    ¼ cup granulated sugar (can substitute other sweeteners like erythritol or coconut or raw)

    1 egg white

    ½ tbsp vanilla extract

    ¼ + 2 tbsp all purpose, whole wheat, keto or gluten free flour

    Pinch of salt

    ⅛ tsp baking soda

    3 tbsp milk (can substitute non dairy version)

    ¼ tsp apple cider or white vinegar

    Food dyes (natural recommended)

    FOR THE BUTTERCREAM:

    4 tbsp butter, softened

    1 cup powdered sugar (erythritol can be substituted)

    1 tsp vanilla extract

    ½-1 tbsp cream, milk or non dairy milk alternative

    DIRECTIONS:

    Preheat oven to 350 degrees. Grease and flour a 4x4 inch ramekin or baking dish.

    In a mixing bowl, mix together the butter and sugar for 2-3 minutes on medium speed until light and fluffy. Add the egg and vanilla, and beat for an additional 15-30 seconds.

    Reduce mixing speed to low and stir in the flour, baking soda, and salt, Stir in the milk and vinegar, stirring mixture until well combined

    Divide the mixture into six separate cups or bowls and tint with food coloring. Drop the batter by tablespoons into the baking pan.

    Bake at 350 degrees for 20-25 minutes, or until done. Remove from oven, allow cake to cool for several minutes before removing the cake from baking pan to cool completely on a wire rack. Frost when cooled.

    TO MAKE THE FROSTING:

    Beat ingredients on medium speed until frosting is light and fluffy. (Approximately 2-3 minutes). Frost or pipe frosting onto cake.
