Delicious strawberry sour cream ice cream combines the delicious sweet taste of strawberries with just a hint of sour. This ice cream is a perfectly creamy treat full of summers best flavors!
With all the craziness, the light at the end of the tunnel is coming. School is coming to a close and with that the kids activities are too. School is still keeping me busy and putting the house together has been quite the chore, It's mostly together, just not all the way.
But for now, it's just time to sprint to the finish line. This ice cream recipe was my daughters creation. She was doing an iron chef challenge for her food's class and had to use the ingredient sour cream. She came up with this recipe. of course, she told me about the recipe the night before it was due so of course it was a late night trip to the grocery store and an early morning of crazy ice cream making.
I made up the strawberry compote at five in the morning and then ran to the gym while the ice cream churned. When I got home it came out the ice cream maker with such a delicious creamy consistency!
Ingredients
- 2 ½ cups strawberries, rinsed
- 1 cup sugar
- 1 cup sour cream
- 1 ½ cups half-and-half or whipped cream
- 2 tsp vanilla
Instructions
- Cut stems from strawberries. In a saucepan set to medium high heat, place the strawberries and sugar. Stir. Heat the mixture until bubbly. Remove from heat and mash the strawberries with a potato masher.
- Allow mixture to cool (approximately 10-15 minutes).
- In an ice cream maker, place the strawberries and chocolate mixture, the sour cream, and half and half or whipped cream. stir. Make ice cream according to manufacturers directions. The last couple of minutes of churning add the vanilla.
- Serve immediately or place into an airtight container and allow ice cream to harden.
