    Sweet Potato Crepes

    Getting kids to eat healthy can be a challenge. Today as part of the Secret Recipe Club I'm surprising Shirley of Enriching Your Kids by sharing one of her recipes. Shirley struggles to get her kids to eat healthy. Shirley also manages another blog that talks about moral development in kids. (Since I'm kind of a brain geek, I found her other blog fascinating. I'm starting my masters in clinical psychology in the fall).

    Shirley does a fantastic job of cooking many of her recipes from scratch and bringing a unique creative flair to them that appeal to kids. Some of the recipes that caught our eye were:

    Today we're making sweet potato crepes. They are delicious and taste great with some cream on top! Fill them with some chicken and vegetables and they are a delicious main dish or fill with some berries and top with whipped cream for a quick and healthy dessert.

    Sweet Potato Crepes

    Ingredients

    • ¾ cup unbleached all purpose flour or whole wheat flour
    • 1 tsp baking powder
    • 1 cup sweet potatoes, boiled and cubed (1 large sweet potato=1 cup)
    • 1 egg
    • 1 cup milk (can substitute non dairy variety)
    • 2 tbsp grated jaggery, brown sugar, honey or coconut sugar
    • 3 cardamoms, ground (If you don't have cardamom, try equal parts cinnamon and nutmeg, cinnamon and ginger, or cinnamon and cloves)
    • 2 tbsp butter, melted

    Instructions

    1. In a small bowl, mix together the flour and baking powder. Set aside.
    2. In the bowl of a mixer, mix the sweet potatoes until smooth. Add in the egg and mix until combined.
    3. Alternate adding in the flour mixture and the milk until smooth. Add to the mixer the sweetener, cardamoms (or substitute) and one tablespoon melted butter. Continue to stir until smooth.
    4. Heat a skillet to medium heat. Add the remaining one tablespoon of butter and swirl around in the pan. Add ¼ cup batter and swirl the batter around. Allow crepe to cook on one side until lightly browned before flipping and cooking on the other side. Remove from heat, continue cooking batter until done.
    5. To serve: To serve as a main dish, fill crepes with grilled chicken and vegetables. Serve drizzled in vinegarette. (You may want to omit the cardamom or subsitute if making as a main dish). To serve as a dessert, fill with berries and top with whipping cream.

      Crepes are such a great foil for sweet or savory and I love the idea of incorporating sweet potato into the batter for some extra nutritional value.

      I was actually just thinking over the weekend that I've never made crepes, and it's time to change that! Aaaaand I have an extra sweet potato already in the house, just begging to be used up. Maybe it means it's time to give these a try? =) Great choice for the SRC this month!
