This ultimate slow cooker BBQ chicken sandwich is the perfect sandwich for the Superbowl! Get out the stretchy pants because this sandwich is hearty and combines three of your favorites--bacon, onion rings and barbeque!
I'll give him this. My boyfriend is a trooper. Our two girls wanted to hang out together last Saturday and he volunteered. Having cousins who are my kids ages has been like having several sets of twins. I'm experienced. I've had years of practice. (Like all of those diaper changing years). But he has not. And the PERFECT person to break him in to this new world would definetely be my youngest. Oh she broke him in. The girls went from project to project to project, then he took them to Target (my daughter goes CRAZY at Target). She was sneaking things into the cart and tested my poor boyfriend out when she got mad that he wouldn't buy her a toy. The girls then took him through the ringer at a movie and to top of the night--one of the girls lost her favorite purse at Cabela's which caused all four of us to go through a store wide search.
The next night, the girls decided that they wanted to put together their Christmas presents together--their Fuzzezz dolls. One made the dog and the other the bear.
But did this poor man get a break? Ha ha, no. My son kept him busy by needing his help to install a new graphics card for his computer and helping him download who knows what to the computer. My boyfriend went back and forth between helping with Fuzzezz put together and computer help. Like a trooper he was able to navigate it and got a bear assembled and the computer finished.
I made dinner.
I also helped make a dog.
I did stack the dishwasher.
I also created a wall of Lysol cloud through the house behind my little under the weather nephew. I got some funny looks from the newbies to my Lysol cloud theory. I once again warned my boyfriend there were a lot of layers with me. He just laughed and went back to helping my son assemble the computer. I went back to creating Lysol clouds and spraying everything my nephew touched. The girls and my son joined in, asking me to spray things he touched. It became our family game night. I think my sister was overwhelmed with the incredible cleaning measures I took.
She also worries she might have lung cancer.
Did I tell you the Superbowl is coming up soon? So are the Olympics, but first we need to get through the Superbowl.
This sandwich is epic. Slow cooker BBQ chicken, cheese, onion rings and bacon. This is man's favorite meal. It also warrants a few days in the gym and stretchy pants. We used all natural and organic ingredients so I've convinced myself it's healthier.
We paired it with peanut butter bars. Just to up the "get your butt to the gym" factor.
Of course, I had to make three different versions.
L-R: Gluten free naturally sweetened peanut butter bars (me), naturally sweetened NOT gluten free peanut butter bars (daughter), give me gluten and give me sugar peanut butter bars (everybody else)
Sigh.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 bottle barbeque sauce (we used Stubb's)
- Toasted hamburger or slider buns
- Onion rings, cooked (we used Alexia)
- Bacon slices, cooked
- Cheese
Instructions
- In a slow cooker, place the chicken and barbeque sauce. Cook on low for 6-8 hours or high for 4-5 hours. Once meet is tender and cooked, remove and shred, then return to slow cooker to stir. The last half an hour of cooking make the onion rings and bacon according to directions.
- To assemble sandwich: Toast the buns, then place cheese, barbeque chicken, bacon and onion rings on the sandwich.
- Serve with a salad, french fries or baked beans.
